UHT sterilized milk was stored for 4 months under freezing conditions(-20 ?),refrigeration conditions(4?),room temperature(25?),simulation conditions of high temperature in summer,and simulation conditions of high temperature in long-distance.The contents of furosine and lactulose in such milk samples were detected regularly,and the use of reconstituted milk were identified according to the standard.100% reconstituted milk samples were stored under room temperature(25?),simulation conditions of high temperature in summer for 6 months,simulation conditions of high temperature in long-distance for 6 days.The contents of furosine and lactulose in such milk samples were detected regularly,and the use of reconstituted milk were identified according to the standard.this paper aims to study the changes of furosine and lactulose under different storage and transportation conditions,especially in UHT sterilized milk and 100% recovered milk,and to explore the effects of furosine and lactulose in UHT sterilized milk under different storage and transportation conditions,to provide scientific theoretical basis and data support for the identification of recovered milk.The results show that both contents of furosine and lactulose in UHT sterilized milk had no significant change under-20?and 4?(P>0.05);The content of furosine in UHT sterilized milk increased significantly(P>0.05)under25?,while the content of lactulose did not change significantly(P>0.05);Both contents of furosine and lactulose in UHT sterilized milk increased significantly under simulation conditions of high temperature in summer,and simulation conditions of high temperature in long-distance(P<0.05).Therefore,as the identification results of reconstituted milk,it can be accurately determined that no reconstituted milk was used in the samples,which were stored under room temperature;but after 90 days of simulation conditions of high temperature in summer,or 3 days of simulation conditions of high temperature in long-distance,the content of lactulose was greater than 600 mg/L,which can not be judged according to the standard.The results showed that both contents of furosine and lactulose in reconstituted milk increased significantly under any conditions(P < 0.05).As the identification results of reconstituted milk,it can be accurately determined that reconstituted milk was added into the samples,which were stored under room temperature.but after 90 days of simulation conditions of high temperature in summer,or 3days of simulation conditions of high temperature in long-distance,the content of lactulose was greater than 600 mg/L,which can not be judged according to the standard.The results can be drawn that The contents of furosine and lactulose in UHT sterilized milk were affected by storage temperature.The higher the storage temperature and the longer the storage time of UHT sterilized milk,the higher the contents of furosine and lactulose.It is recommended to strictly control the storage environment of liquid milk when storing liquid milk in high temperature weather in summer or long-distance transportation of liquid milk,and it is best to use refrigerated transportation.
