Pickering emulsions are stabilized by solid particles instead of molecular surfactants.Pickering emulsions offer better stability compared to conventional emulsions and can adapt to environmental friendliness by selecting particles of biomass origin,biodegradable or biocompatible to stabilize the emulsion.Chitin is a biomacromolecule with a wide range of sources,good biodegradability and biocompatibility,and is therefore of interest to many researchers.The effective extraction of chitin from natural sources for the preparation of nano chitin and its use in stabilizing Pickering emulsions for the preparation of functionalized composites is one of the current research trends in the field of biomaterials.In this work,nano chitin suspensions were prepared from chitin,which was used to prepare Pickering emulsions(oil-in-water type)to investigate the emulsification capability and efficiency of nano chitin for oils with different interfacial tensions,and oleogel-in-water Pickering emulsions were prepared.The chitin was treated with hydrochloric acid steam,subsequently washed with deionized water to neutral and filtered,after lyophilized,it was dispersed in deionized water by a disperser to give a nano-chitin suspension.When dodecane was used,who owns a relatively higher O/W interfacial tension,the emulsion was more stable,and the droplet size variation of the emulsion was highly correlated with the concentration of the nano-chitin suspension.When the nano-chitin concentration was less than 0.4 wt%,the droplet size of the emulsion became significantly smaller with the increase of the nano-chitin concentration;when the concentration of nano-chitin was greater than or equal to 0.4 wt%,the droplet size of the emulsion did not change significantly with the increase of nano-chitin concentration;the nano-chitin/dodecane mass ratio was as low as 0.009 to form a stable Pickering emulsion and keep it stable for 30 days.Corn oil and ethyl decanoate were used,both of which have similar relatively lower O/W interfacial tension.Ethyl decanoate cannot be stabilized to form stable emulsions;corn oil could be stabilized by nano-chitin suspension to fabricate oil-in-water Pickering emulsion.From the rheological behavior of emulsions stabilized by nano-chitin,it can be seen that when the O/W interfacial tension of the oil phase is higher,the emulsion is more stable and shows the rheological behavior of gel(G?>G?),while the corn oil with lower O/W interfacial tension undergoes a larger change under the same conditions(G?
