The effective and timely cleaning of dairy equipment is an important premise to ensure the quality and safety of dairy products.The development of new detergent and cleaning technology has important industrial application value.From the perspective of practical production and application,according to the production and processing conditions and market demand,a bacteriostatic compound CIP detergent is designed and studied in this paper.The specific research contents are as follows:(1)Construction and optimization of surfactant compound system in detergent formula.The five surfactants,sodium fatty acid methyl ester sulfonate,fatty alcohol polyoxyethylene ether sulfate sodium,sodium lauyl adipol,alkyl polyglycoside and lauryl betaine,were selected as the evaluation index,and the foaming performance of the defoamer was used as the evaluation index.Design-Expert.was used to evaluate the performance of the five surfactants.V8.0.6 software carries out the response surface experimental design of five factors and three levels,and completes the process optimization of the compound system.The biodegradability of surfactant complex system was investigated.(2)Study on the compound and antibacterial properties of antibacterial agents in the formula of detergent.nisin and oregano essential oil were selected as antibacterial components.The combined inhibitory concentration and effect were measured by micro chessboard dilution method,and the hierarchical inhibitory concentration index was calculated.The antibacterial performance of the combined antibacterial system was tested,and the final ratio was determined in combination with industrial needs.The ability of nisin and OEO combined antimicrobial agents was discussed.(3)Compounding and performance evaluation of detergent.After determining the ratio of surfactant and bacteriostatic detergent,additives were added to prepare the detergent,and the stability,storage validity,hard water resistance,total microbial content,arsenic content and antibacterial properties were investigated.Using the multifunctional living cell high-resolution microscopic imaging system and energy dispersive X-ray spectrum scanning electron microscope,the composition of milk dirt is analyzed,and the cleaning effect of the detergent on organic dirt and inorganic dirt is evaluated.It is verified that the detergent has excellent decontamination rate.Compared with the performance of commercial brand detergent,it is confirmed that the cleaning effect of CIP detergent developed in this paper is higher than or equal to that of commercial detergent,which is also more in line with the needs of low foam in the actual production of dairy factory,and the optimization of cleaning performance is realized under the condition of weak alkalinity..
