| Sea asparagus plant salt is a kind of compound salt extracted from green plants and very beneficial to human health.It is an ideal salt seasoning.Because sea asparagus not only contains organic iodine,but also contains inorganic salts that can balance trace elements,which are easily absorbed by the human body and have no side effects.Therefore,it is suitable for patients with cardiovascular and cerebrovascular diseases,renal impairment and diabetes.It has been used in the treatment of diseases such as constipation,hyperlipidemia,hypertension,hyperglycemia and cancer.This paper mainly studies the extraction process and functional components of sea asparagus plant salt,which provides a theoretical basis for the development and application of plant salt in the future.Determination of mineral elements in sea asparagus powder in two different growth periods: vegetative growth period and reproductive growth period.the results show that the highest contents of K and Na elements in vegetative growth period reach 79.82 mg/kg,811.995 mg/kg,respectively.However,the K concentration in the reproductive growth phase increased to 107.75 mg/kg,and the Na concentration decreased to 699.729 mg/kg.In the vegetative growth period and reproductive growth period,heavy metal element: The content of As is 0.3159 mg/kg,0.1751 mg/kg,The content of Hg is0.092 mg/kg,0.0118 mg/kg;Pb element content is 0.3533 mg/kg,1.057 mg/kg.The effects of three conditions of solid-liquid ratio,leaching time and leaching temperature on the extraction of sea asparagus plant salt were determined by single factor experiment with water extract as evaluation index.Combined with the response surface analysis method,the optimal extraction process of sea asparagus plant salt was obtained.The results showed that the most favorable conditions for extraction of sea asparagus plant salt were as follows: the ratio of solid to liquid was 1:22 g/m L,the extraction time was 8 hours,and the extraction temperature was80 ℃.Based on the production process of salad dressings,sea asparagus plant salt was used instead of ordinary table salt to study healthier salad dressings.By improving the formula,it can meet the taste of the public and reduce the intake of edible salt in the human body.After determining the sensory evaluation criteria,firstly study the selection of sea asparagus plant salt in mature stage and non-mature stage sea asparagus plant salt,and then choose soybean oil and corn oil,and the addition amount of salad dressing ingredients is the same under other conditions.Under the circumstance,follow-up related research was carried out,and finally three factors with greater influence were selected for orthogonal test,and the most suitable formula of sea asparagus vegetable salt salad dressing was obtained.The optimal formula of sea asparagus vegetable salt salad dressing was determined as follows: the addition of corn oil is 62.2%,the addition of sea asparagus vegetable salt is 1.7%,the addition of white sugar is 18.7%,the addition of white vinegar is4.9%,and the addition of egg yolk is 12.5%.The shelf life of sea asparagus vegetable salt salad dressing was determined at the storage temperature of 4 ℃ and 25 ℃,respectively.By measuring the peroxide value,the total number of colonies,and the number of coliform colonies,and performing regression analysis on the peroxide value,it was concluded that the shelf life of sea asparagus vegetable salt salad dressing at 4 °C and 25 °C was 10.1 days and 5.2 days,respectively. |
