| The cholesterol level of duck oil is relatively low,and the proportion of monounsaturated fatty acids and polyunsaturated fatty acids is relatively balanced,but it is easily affected by the external environment,resulting in its oxidative deterioration,thus seriously damaging its nutritional value and practical application value.Microencapsulation technology can effectively reduce the influence of external adverse factors on the sensitive components of the core material,not only cover up the unpleasant smell of the embedded material,but also change its physical morphology and enhance the stability of oil.In this paper,the purpose is to study the preparation technology of microencapsulation of duck oil using starch sodium octenyl succinate and maltodextrin as wall materials and duck oil as core material.Duck oil microcapsule powder was prepared by spray drying,and its basic physical and chemical properties and storage stability were studied comprehensively.At the same time,duck soup seasoning powder was prepared by using duck oil microcapsule powder as the main raw material,salt,sugar,yeast extract and flavor nucleotide disodium.A factory with an annual output of 1000 tons was designed.It provides some theoretical guidance and scientific basic for realizing the achievement transformation and industrialization of comprehensive utilization of duck by-products.The main research results of this paper are as follows:1.In this chapter,using duck oil as core material,starch sodium octenyl succinate and maltodextrin as composite wall materials,duck oil microcapsules were prepared by spray dtying,and their basic physical and chemical properties were determined.At the same time,we also studied the release of duck oil microcapsules under accelerated storage conditions to explore its performance in practical application.The research results show that when 4% whey protein and 1% emulsifier are added,the embedding rate of duck oil microcapsule is 86.17%.It is the characteristics of low water content,high solubility,small average particle size,uniform distribution and good thermal stability.The microstructure of the microcapsule was analyzed by scanning electron microscope.the results showed that the microcapsules showed a spherical structure,the surface was smooth and round,and there was no obvious bump.The storage stability of duck oil microcapsules was studied by ovenaccelerated oxidation test.The results showed that when starch sodium octenyl succinate and maltodextrin were used as composite wall materials,the peroxide value and thiobarbiturica acid value of the microcapsules prepared by adding 4% whey protein and 1% emulsifier were lower during storage.The shelf life is about 177 days.2.The purpose of this chapter is to study the seasoning technology of duck soup seasoning powder.Plackett-Burman experimental design was used to screen the significant factors.Through the single factor test,we found that duck oil microcapsule powder,salt,yeast extract had great influence on the sensory score of the product,so we chose these three factors for further study.Through the Box-Behnken center combination desigh test,we optimized the process formula of the product,and the best formula of the product,and the best formula was obtained as follows: 205 g/L duck oil microcapsule powder,155 g/L salt,7.8 g/L yeast extract.Finally,we scored the formula with a sensory score of 84.9,which was close to the model value.3.The purpose of this chapter is to design the factory with an annual output of 1000 tons of duck soup seasoning powder with reference to the processing process of duck soup seasoning powder.The research results showed that the annual production of 1000 tons of duck soup seasoning powder required 514.93 t duck oil,294.24 t starch sodium octenyl succinate,588.52 t maltodextrin,58.86 t whey protein,14.72 t emulsifier,266.98 t salt,150.71 t sugar,134.35 t yeast extract,68.89 t monosodium glutamate,12.92 t disodium 5’-ribonucleotide and 6.89 t disodium succinate.1.0098 million outer packaging,101700 cartons,annual water consumption of 15938.21 tons,annual electricity consumption of 2571855 kwh,annual sales 60 million yuan,annual total cost of 48.1271 million yuan,annual net profit 7.6544 million yuan,annual net profit 12.76%. |
