| As the most abundant metallic element in the earth,aluminum has been widely used in light industry and food processing industry in history due to its good physical and chemical properties.With the progress of science and technology,a large number of studies have shown that aluminum is a non-essential element of the human body,which may enter the body through different media,such as the environment and food,and a variety of ways.The World Health Organization(WHO)and the United Nations Food and Agriculture Organization(FAO)regulate aluminum as a food contaminant because of the harmful effects of prolonged exposure to excessive amounts of aluminum.Aluminum residues in food not only exist in pasta products as the staple food in the north,but also exist in vermicelli noodles,baked food,fried noodles and other foods as supplementary food for people in the south.Aluminum residue in food is mainly due to the active addition of food additives in the food production process,such as aluminum potassium sulfate hydrate,aluminum hydroxide and other food additives used to improve the taste and process of food.Since the research on food aluminum-free processing technology is still in its infancy,it is necessary to establish a risk assessment and management mechanism for aluminum residues in various foods,and adjust it appropriately according to the local consumption habits and the fluctuation of actual food detection.In this paper,through the use of Jiangsu Province Physical and Chemical Testing Center in 2016-2020 from various food samples from Jiangsu market,the aluminum detection value data measured by spectrophotometry,and the weekly consumption survey of consumer target food collected in Yangzhou city.By analyzing the proportion of aluminum detection,the severity of aluminum pollution and the weekly consumption of various kinds of food corresponding to different age groups,the risk of aluminum intake was comprehensively evaluated.The results showed that five kinds of food with high detection rate of aluminum were jellyfish(100%),Lentinus edodes(71.4%),vermicelli(70%),ordinary bulk vermicelli(54.5%),silver taro vermicelli(50%),Sufu(50%),and the rest Flavor dried bean curd(50%);five kinds of food with high aluminum pollution rate were ordinary bulk vermicelli(45.5%),vermicelli(13.3%),Lentinus edodes(9.8%)and sweet potato vermicelli(8%).Combined with the consumption statistics of 56 adult men,50 adult women and 20 children,it is concluded that the total aluminum intake of boys per kg body weight per week is the highest among different age groups with different characteristics,which is7.83 mg/kg/week.To sum up,jellyfish,loose vermicelli,vermicelli,Lentinus edodes,etc.are the categories that need to pay attention to the risk and proportion of aluminum pollution in the stage of food industry;the common foods with high risk of aluminum intake in the survey group are Chinese style bread,biscuits,western style cake and Western style noodles. |
