Catering industry has made a great contribution to the economic growth and played a significant role in promoting the regional economy.The grilled fish is gradually popularized in various cities in China,and Chain-orientation has been further strengthened.The market competition has heated up nowadays.From the word-of-mouth of products to the quality of service,the service ability in the market competition has become a standard that the consumer measures the quality of product and the value of brand.The enterprise should pay attention to the promotion of the comprehensive service level,in order to provide the higher quality service for the consumers and win the trust and loyalty of the customers,it has become the problem that enterprises must be faced.Based on the effect of service quality of grilled fish on customer satisfaction experience,this paper selects Henan Huaqiandai Co.,Ltd.(hereinafter referred to as QD)as the research object,to analyse the impact of the service quality on customer perception.Delphi method and customer surveys were adopted to collect the data on-site distribution,the SPSS 25 and Amos 26 software were used to test the reliability and validity of the data.As a standard to improve service quality,a optimization of service marketing to implement,and a good brand image among customers to maintain,it is the key driving force for QD to realize transcendental development.Finally,the results of the study show that the service problem of QD are mainly due to customer perception,dining environment and the ineffectiveness of on-site service communication,etc.the main reasons are service training,health dead-end,service communication and so on.To add the sample of the grilled fish restaurant is a good supplement in the academic practice.It expanded the field of service theory and provide some suggestions to promote the development of the grilled fish restaurant in the real operation.
