With development of the society and improvement of the living standard, the consumer demand for the high quality meat products is constantly increasing. The situations of gradual separation of pork production and consumption as well as the complexity of the food processing chain may make it is difficult for consumers to obtain pork production information without the information transfer. Traceability for livestock product is widely recognized to be an effective measure for any modern and integrated food safety control system. It helps consumer to close the production units.In developed country, traceability of animal products has been mainly applied to the beef industry. Electronic ear marker, electronic rumen bolus, DNA marker and iris marker have been normally applied for animal individual identification. Because of the differences in biological characters, breeding technologies and economic values between pig and cattle, traceability of beef industry is unsuitable for Chinese pork industry. The traceability of pork product on basis of the practical situation of China should be developed. It can help consumer to confide in pork safety and encourage the pork industry developing.Based upon the analysis of the entire pork production chain, key ingredients of safety pork production have been researched. At breeding stage, key ingredients are breeding environment, animal drug, immunity and fodder. At slaughtering stage, key ingredients are quarantine for pig, inspection for pork, disinfection for conveyance, slaughterhouse environment and worker health. At retail stage, key ingredients are worker health, hygiene for meat storage and meat cutting. By use for reference of standards and statutes, limit for warning has been researched and the forewarning system has been established, intelligent management systems of key information has been developed for the first time in China.The individual identification is a prerequisite for the proper establishment of traceability system. By analyzing the actuality of pig individual identification, and researching automatic identification technology, pig individual identification has been designed. By using the uniform animal plastics ear marker promulgated by Ministry of Agriculture of China in 2002 and two-dimension bar code technique, a new ear marker has been designed for individual identification of pork production. Combing the RFID (Radio Frequency Identification) for carcass identification and one-dimension bar code label for retail cuts, the controlling method for pork identifications has been proposed in this paper. Four experimental trials for testing the effect of the automatic information reading at Tianhuan Slaughterhouse of Nanjing Tianhuan Food (Group) Co. Ltd have beenconducted to validate the method. The result indicated that the individual identifications and controlling method can satisfy the basic request of pork production traceability system.The method of the software development, which is based on reusable component, is one of the mainstreams of software development. The theory and method based on reusable component for pork traceability have been discussed in this paper. The whole framework, network framework, monitoring module and software structure of system have been confirmed based on component technology and user demand. Meanwhile, the component partition based on component development has been also discussed. By using UML(The Unified modeling language), the modeling of this system component has been analyzed , The prototype of component for this system has been developed, the code or function of this system component has been implemented reuse. Finally, this paper has discussed the application of component, the assemblage of component, the test of component and the test of system, by using individual identification component as an example.The traceability in the entire pork production chain has been put into practice at Dingshan Pig Farm and Tianhuan Slaughterhouse of Nanjing Tianhuan Food (Group) Co. Ltd, and it has been primarily validated.
