China is the largest country of cultivating sweet potato in the world. The resources of sweet potato vines (SPV) are huge. At present, SPV are seldom utilized. This causes the waste of resources and pollution of environment. To exploit the rich resources, SPV of XuShu 18 were selected as raw materials since this kind is cultivated in China widely, and for the first time, active polysaccharides (PSPV) and flavonoids (FSPV) from them were extracted by comprehensive pilot-extracting technologies. The remains of the SPV after extracting could be used to make special fiber by advanced technology. Those products could be used as high quality and effective healthy food and raw material for medicine. The resources are utilized efficiently, and the kinds of products are diversified by this value-added process. To establish foundation for the industrialized production of active polysaccharides and flavonoids from SPV and provide the theoretical basis for applying them as healthy food, it is necessary to understand the chemical constituents and physiological activities of pilot-extracted PSPV and FSPV. In this paper, we studied the chemical constituents, antioxidant in vitro and in vivo, antilipidemic, hypoglycemic and anti-tumor and imunoregulation effect of PSPV and FSPV. The results are as followings. 1. The physical and chemical properties of PSPVPSPV powders are obtained from pilot-extraction. It is light yellow in color. The purity of PSPV is 93.5%. The absorption spectrum of PSPV is verified by UV and IR methods.Using DEAE-cellulose column and NaCl solution as eluting reagent, three kinds of pure polysaccharides are obtained from PSPV. Then the molecular weight distribution and sugar compositions were studied using High Performance Gel Filtration Chromatography and GC. The followings are the results. PSPV I was separated by DEAE-cellulose from the PSPV which was extracted from the materials harvested in the middle of June. It is grey and its yield is 25.3 %. The M.W. is 6.278×10~4 Da and it is mainly composed of D-xylose, D-mannose and D-glucose.
