Meeting energy need is the precondition in all animals. In the modern livestock production and feed industry, fats and oils are usually added to broiler diet as dietary energy-yielding ingredients to improve productivity, especially in growth broiler. In prophase, adding oils can promote growth, in the later period, not only can promot growth, but also significantly improve fat deposition in body and increase flavor. However, fat digestion and absorption are affected by many factors, especially bile secretion, and so on. How to make the added fat well disperse in the chyme system of animal intestine, under the action of the enzymes to fully digest, achieve the desired objectives, choosing suitable surfactant (feed emulsifier) is important.This experiment chosen eight food common surfactants (emulsifiers) SE11, SE13, SE15, SSL, Sp60, Tw60, GMS,Lecithin and six surfactants F-68, APG0810, APG1214, LAS, AEO3, PGFE to conducte comparative studies. Analysising the reasuts that contains the stability of the emulsion, the emulsification effect of surfactants on feed oil, particle size, electric conductivity,ζ-potential and stable volume ratio and other properties. On this basis, APG1214 which had better emulsification effect, proper dosage and suitable price, was selected to carry out broiler feeding experiment. The main results as follow:1) For corn oil emulsion, which the smallest particle size was added SE11, SE15, respectively,237.58 nm and 305.58 nm.the most stable conductivity was added SE11. the highest stable volume ratio of SE13 was 82.3%; in oil emulsion system, which the smallest particle size was added SE15, SSL, respectively,356.93 nm and 363.46 nm, which the most stable conductivity was added SE15, its stable volume ratio was 80.4%; for coconut oil emulsion, which the smallest particle size was added SE11, SE13, respectively,302.31 nm and 316.02 nm, the most stable conductivity was added SE13, the volume ratio of SE13 up to 84.4%.2) Emulsifying power of APG1214, PGFE were significantly higher than other surfactants, respectively,40.92%and 33.80%. The particle size of APG0810 and APG1214, respectively,5.085μm,6.112μm was significantly lower than PGFE and F-68. on the different pH conditions, LAS stability was the best, and did not effect by pH. APG0810, APG1214 were little effected by pH, the emulsion system is relatively stable. Compare to the control, the stable volume ratio of surfactants increased significantly, but the difference between the different surfactants was not great.3) In Oil-water system, feed system, the enzymatic efficiency which PGFE, APG0810, APG1214 were relatively effective. In olive oil-water system were 103.4%,101.8%,105.2%; in soybean oil-water system were 118.5%,126.7%,131.2%; in feed system were 101.7%,102.9%,103.5%. The particle size of emulsion that added APG1214, which hydrolysis 12 hours was 0.851μm.4) Feeding experiment which added APG (APG1214) 750 g/t and 500 g/t in broiler diets, showed that the average daily gain, net weight gain were significantly higher than the control group, respectively increased by 10.1%and 3.6%(p<0.05); and feed gain ratio decreased significantly, decreased by 9.5%and 6.6%(p<0.05). GroupⅡthat added 750 g/t APG1214 difference was more obvious in the productivity.
