The technology of extraction and separation and purification of polysaccharide from Zizyphus jujuba are studied systematically. Based on these study a mature extraction process of polysaccharide is put forward and the product is analyzed with ultraviolet absorption spectra and infrared spectra.First a new elimination method of albumen which is concluded in raw polysaccharide is discussed. In this method TCA (trichloroacetic acid) is used as precipitator to deposit albumen. The effects of every main factors such as concentration of TCA, reaction time and reaction temperature are discussed. The optimum conditions are determined with orthogonal test. Second the raw polysaccharide is purified by CTAB. With this method JDP (Jujuba polysaccharide) is separated into JDP-A (Jujuba acid polysaccharide) and JDP-N (Jujuba neutral polysaccharide). The polysaccharide content of refined JDP is enhanced about 20% compared with raw production.Besides the traditional extraction process a simplified process which is easy to be industrialized is also discussed. The simplified process is shorter, lower cost and green industry compared with traditional technology. By setting up extraction model author attempts to elucidate the essence of extraction process. It can provide theoretical value for the pilot production and industrialization process.
