The electrified co-axial jet of two immiscible liquids is a kind of technology by which a compound liquid drop in a high voltage electrical filed can be divided into droplets whose diameters are in the micrometer grade. As there is a complex interface between inner and outer liquid, mechanism of the function is very complicated, so the study is not abundant. So an experimental investigation on the electrified co-axial jets of two immiscible liquids issuing from a structured Taylor cone has been carried out. This study considers the effect of the electrical potential, the flow rate of inner and outer and the inner diameter of inner needle.Experimental results show that diameters of atomization droplet get smaller when the voltage gets higher. As the optimal voltage is reached, diameters of atomization grain don't get bigger any more. the viscidity of outer liquid dominant diameters of atomization droplets. It is noted that for a given value of the inner liquid flow rate, the droplet size increases linearly with the value of the outer liquid flow rate. The droplet size increases with the diameter of the sprayer too.The suitable condition to produce the microcapsule is found through the experiment: the electrical potential is 8kV;the inner diameter of inner needle is 0.7mm;the flow rate of inner and outer is 3ml/h.The catechin microcapsules with the wall materials of alginate-calcium chloride were prepared with the electrified co-axial jet of two immiscible liquids. It can enwrap 83% of the gross through the examine of HLPC.The study investigate the effect of the concentration of alginate and CaCl2 to the preparation of the catechin microcapsules and the release of catechin from capsules. It is noted that the rate to form microcapsules increases with the concentration of alginate and CaCl2, and the microcapsules is stability in acidic pH and provide rapid release at neutral pH.
