The technology of extracting, separating, and purifying saponins and polysaccharide, which are main active ingredients of Momordica charantial, is studied systematically. Based on this study, a mature extraction and separation technology is put forward.The multiple enzyme that is the most suitable is selected through the exeriments of mensurating the enzymes' activities and of decomposing Momordica charantial. And the optimum conditions of extracting saponins are determined through single factor and orthogonal test. With a ratio of 1:4 between Momordica charantial and water, an addition of 1.4% multiple enzyme, pH5.0, the main active ingredients are extracted at 60 °C for 90min. Under this condition, the percentage of the abstracting of Momordica charantial Saponins is 0.2953g/L, and the last reaching of Momordica charantial polysaccharose is about 0.15%.In order to separate saponins from extracting solution, the experiment of macroreticular resin is performed. Through comparing several macroreticular resins, we finally screened out LSA-20 resin as the absorption resin for purifying saponins. Then the conditions of purification of saponins with macroreticular resin are studied by static and dynamic experiment. The study ascertained the optimal condition of absorption and resolution process. Under this process, the product contains saponins about 76.9%. At same time the extracting and purifying of polysaccharide is discussed theoretically.Enzyme extraction liquor is purified through alcohol deposition. The experiment expresses that the polysaccharide is deposited by 95% alcohol (alcohol volume: solution volume=3:l). By this way, macroreticular resin avoid be polluted, in addition to improve the purification of products and produce polysaccharide.A kinetic equation for Momordica charantial extraction process is presented based on Fick's second law of diffusion. Through experiments a linearity equation isfinished, sequentially the kinetics constant of extraction is determined. And the kinetics of Momordica charantial extraction process agrees with the first-order rate equation. The extraction process could be described by this equation well.In comparison with traditional technology, the technology can extract two kinds of active ingredients at the same time, and it is reaction-rapid, high efficient and green-conditions. The technology, which achieves saponins and polysaccharide, can be industrialized easily.
