| Ginger is a kind of daily food and seasoning, it is a daily traditional Chinese medicine too. The fact that ginger could act as anti-nausea and vomiting agent has been accepted by most of experts and scholars. The extraction, purification and microencapsulation of gingerol which is the effective composition for anti-nausea and vomiting in ginger have been preliminary studied in this paper.Three different methods for gingerol extraction were investigated under the influences of varied experimental factors, and the optimum process conditions set forth below were identified for each extraction method through orthogonal analysis: (1) the ultrasonic extraction: ethanol as the extracting solvent, the granularity of ginger powder between 3050 eye, the ratio of solid to liquid at 1 '. 10, the material's temperature for extraction at 60℃, affected by ultrasonic with frequency at 20kHz for 20 minutes. And the yield rate reached 0.762%; (2) the microwave complementary extraction: hexane as the extracting solvent, the granularity of ginger power beyond 70eye, the ratio of solid to liquid at 1 : 12.5, the microwave power orientated at 2 corresponding to defreeze frequency modulation and with the microwave radioactive handling for 220s. And the yield rate reached 0.776%; (3) super critical fluid extraction by CO2: extraction time at 180min, extraction pressure set at 28MP with temperature at 50℃, the granularity of ginger at 50eye. And the yield rate reached 0.768%.This paper also researched the method for gingerol purification by the coarse pored absorption resin and its relevant influential factors for extraction. The optimum process conditions were gathered as following: (1) AB—8 for the resin type, the resin quantity adopted at 40mg gingerol per dry resin, hexane to ethanol at 7 : 3 as the eluting solvent, elution rate at 0.4ml/min; and the used times of resin should be controlled within 4.At last the gingerol microencapsulation process by spray drying was discussed, and the collected optimum conditions were obtained as: the maltodextrin and Arabic gum as the wall material with its ratio at 2 : 1, the addition quantity of core material at 25%, material in solid form reaching 20%, the homogenization pressure set at 35MP, the temperature of downcast air at 180℃, the charging temperature at 50℃, the spinning rate of pulverization machine reaching 1000r/min. Under those combined conditions the capsulation efficiency was 90.8% while its productivity reached 92.1%, and the product content of gingerol was 6.2 %. |
