To study the protoplast formation of three strains of yeast: Candida aquatics, Saccharomyces cerevisiae and Brettanomyces anomalus, with the help of PEG. We obtained the fusants of Candida aquatica and Saccharomyces cerevisiae (CS). By the same way we also obtained the fusants of Candida aquatica and Brettanomyces anomalus (CB).Candida aquatica could survive in the environment of extremely low pH, it could produce three kinds of acid-stable α—amylase. The original amylase activity of the Candida aquatica was 133U/g. The K-yeast was a traditional Saccharomyces cerevisiae, it could keep a comparatively high zymolytic ability in high-temperature, and the maximal temperature it could endure was 39°C, Brettanomyces anomalus could endure 40℃.By the means of enzyme method, the highest formation rate for Candida aquatica was 81. 3%, for K-yeast was 96. 2%, for Brettanomyces anomalus...
