Lily is a plant which is announced to have officinal and edible effects in the first batch by the Ministry of Public Health of our country. The traditional process of lily was mainly to produce lily starch powder during which there was a great loss of nutriments due to the processes of refining,precipitation,abstersion and so on.This paper was aimed on producing ultra-fine whole lily powder by using the technology of super-comminution, expanding its application and realizing the highly efficient utilization of the materials and the diversification of the products.Solid-phase grinding super-comminution technology was adopted in the paper to prepare grinding ultra-fine lily powder (GULP),grinding fine lily powder(GFLP) and grinding coarse lily powder (GCLP) from fresh lily by a series processes of drying,coarse comminute,pulverize,grinding super-comminution and classification. Liquid phase microfluidizer super-comminution technology was taken to prepare Instantaneous High Pressure lily powder(IHPLP) from fresh lily by the processes of pretreatment,slaking,refining,homogenizing,microfluidizer instantaneous high pressure and spray drying. The comparision of physical and chemical properties,moisture absorption and rheology character was made。The results were as following:(1) The contents of proteins and starch of lilies after super-comminution (GULP and IHPLP) increased, while the content of dietary fiber reduced.(2) With the decrease of the granularity of lily whole powder after being dealt with super-comminution technology, its specific area,water-retaining capability,oil absorption,emulsibility,solution and the rate of water evaporation increased, while fluidity of powder reduced.(3) With the decrease of the granularity of lily whole powder, its moisture absorption rate,percentage of moisture absorption and critical relative humidity increased.(4) Aqueous solution of lily powder is a kind of non newtonian fluids. With the decrease of the granularity of lily whole powder, the viscosity of lily powder decreased, and its thixotropy was more conspicuous. The concentration and temperature had greater effect on the viscosity of lily whole powder, and its viscosity increased as the concentration increased and decreased as the increase of temperature. The ironic concentration and pH value showed less effect on the viscosity of lily whole powder.(5) Water-retaining capability,oil absorption,solution,emulsibility,specific area,the rate of water evaporation,percentage of moisture absorption and critical relative humidity of IHPLP were bigger than those of GULP. Its granularity and fluidity of powder were smaller than those of GULP; On the rheology character, it had smaller viscosity and conspicuous thixotropy, and the external factors showed less effect than those of GULP.On the application research, lily electuary products were made from GULP and whole milk powder; Chewing tablet products were prepared from IHPLP. Ultra-fine lily whole powder by using super-communition technology could be used in food industry as crude and supplementary materials and food addictives. |
