The peptide is one kind of chemical compound whose molecular structure situates between amino acid and protein, and the ones which may adjust the organism physiology function are called the functional peptide. The function peptide is the multifunctional compound deriving from protein, and it is diverse and origin sufficient, as well, it has many kinds of function to adjust human bodies metabolism and physiology, such as make digest and absorption easy, promote immunity, adjust hormone, antibiotic, antiviral, fall blood pressure, low blood fat and so on. The chicken embryo is the vitalital egg that is fertilized in special technics. The chicken embryo egg has a good flavor and mysterious function. It is edible in the folk, and is usually considered as the nutrition, high quality supplements and illness treatment. The data shows that,The oral liquid, preserved as well as multi-preparation and so on made of chicken embryo displays the remarkable nutriology characteristic through the animal experiment, and it has the efficacy of prevent senescence, antifatigue, enhance resistivity and so on. The preparation of chicken embryo peptide hydrolysing from protein has a broad market.The chicken embryo was taken as the raw material, and three kinds of enzyme (subtilisin,trypsin,papain) was used to hydrolyse protein.The technicses of single enzyme hydrolysis , the multiple enzyme hydrolysis and the ultrafiltration were studied,and the optimum conditions of hydrosis and ultrafiltration were decided.And the peptide was separated and purified primatily. The following were the main results of these experiments:1. The hydrolysis thchnics of subtilisin was studied, and its optimum condition was: the concentration of substrate was 5%, E/S was 4%,pH was 7,temperature was 50℃, and the time was 5 hours.2. The hydrolysis thchnics of trypsin was studied, and its optimum condition was: the concentration of substrate was 5%, E/S was 1%, pH was 7, temperature was 50℃, and the time was 5 hours.3. The hydrolysis thchnics of papain was studied, and its optimum condition was: the concentration of substratewas 5%, E/S was 1%, pH was 6,temperature was 50℃, and the time was 5 hours.4. The hydrolysis thchnics of multiple enzyme was studied, and its optimum condition was: the concentration of substratewas 5%, E/S was 3%,pH was 5,temperature was 45℃,and the time was 4hours,the rate of enzyme(subtilisin:rypsin:papain)was 1:1:2.5. The ultrafiltration thchnics of the hypeptide was studied, and its optimum condition was: the time should be control within 30 min, the rate of import was 120r/min,temperature was 15℃pH was 7.6. The peptide was studied, and the colour,clarity, content of peptide as well as its proportion, determination of protein and antioxidation of different molecular weight were analyses. It showed that the production of which the molecular weight was below 10KD took more than 65%, and the length of the peptide chain was about 4,thus this production could be easily digested and absorpted.7. The production after hydrosis and ultrafiltration was separated and purified primatily, and cation exchange, anion exchange, electrophoretogram were used to analyse the distribution of peptide which had antioxidation.
