In order to explore the mechanism of fresh jujube maturation and senescence, we not only studied on the postharvest physiological and phytochemical changes of Tiaoyuanzao; but also analyze the effect of different environmental factors such as storage of maturity, temperature, different methods on the storage life of jujube in this paper. Obtained by comparing the good way to store the Tiaoyuanzao a month.The results show that different store environment have obviously different storage life. Little red Tiaoyuanzao which with relatively low mature degree have good storage life. It has lower decay rate and relaticely suitable enzyme activity.10%-30% red jujube has better storage life. The study on Tiaoyuanzao showed that the distinct respiration peaks were not found after harvest, therefore, this test material belonged to non-climactic fruit.Suitable temperature makes the Tiaoyuanzao have good storage life.8℃couldn,t inhibit the Tiaoyuanzao,s physiological activity.All quality index and enzyme activity have a worse play than 0℃and 4℃.Relative to 0℃and 8℃,4℃can have the better effect in the jujube,s storage life. This temperature inhibited postharvest maturation and senescence, slowed down the decomposition and prevented the freezing injury.5.0mmol/L oxalic acid treatment showed better effect on the controlling of POD (1.332ΔOD47o/(min.g.FW)-1)and CAT(2.256 A OD24o/(min.g.FW)-1)activity and maintaining of titratable acid(0.251%) than than the others.380mg/h ozone aerating showed no significant disinfect effect. At least this concentration of ozone have no active effect in various physiological indicators. It,s worse than the CK. 0.50% chitosan coating showed well effect in the early time of the storage life, but losed the beneficial effect on protecting jujube in the late stage. It played negative roll on storage.0.60% compound coating (SE) have the good effect in the jujube,s weight loss(2.32%) and Vc(279.10mg/100g), through in the late stage SE didn,t been decomposed as chitosan.Totally, after a month storage at 4℃of little red jujube, oxalic acid and SE coating played well in all kinds of physiological and quality indexs.. Comparing with the other treatment,they defer Tiaoyuanzao's maturation and senescence, and make the jujube have a good quality after a month storage.
