| Red beet (Beta vulgaris var.rubra) originate in Europe and America, as a vegetable for its purple root, is one of the important vegetables in some countries of Europe and America. Betaine is a very important compound in a red beet root, is a quaternary ammonium water-soluble alkaloid, can provide high-activity methyl as methionine, can also maintain the stability of vitamins, promote the fat metabolism, protect the liver in effect, has wide range of applications in feed industry, pharmaceutical industry, food industry and daily chemical industry. The thesis of red beet juice for medicinal research, find the anti-fatigue effect of red beet in mice, and betaine is one of the main active ingredients. The research is divided into the following three aspects:1. In Orthogonal experimental method, systematically study the effects of extraction conditions on red beet juice quality, make improvements in extracting process. The results show that, the higher temperature and longer extracting time cannot increase the total soluble solids content, on the contrary, decrease it. With the rate of red beet to water increase to 1:3, the total soluble solids content reach to the max. The best extraction conditions:temperature 20℃, extracting time 4 min, rate of red beet to water 1:3.2. By swimming mice model, investigate the anti-fatigue effect of red beet juice under the best extraction conditions. and the anti-fatigue effect of betaine in red beet juice. In the research of red beet juice, healthy male mice are divided into high-dose group, middle-dose group, low-dose group, and control group. The control group is given distilled water. The other groups are given different doses of red beet juice. In the research of betaine in red beet juice, healthy male mice are divided into betaine high-dose group, betaine middle-dose group, betaine low-dose group, red beet group, and control group. The red beet group is given red beet juice. The control group is given distilled water. The other groups are given different doses of betaine. After 30 days, swimming time is recorded and the effects on the content of the blood urea nitrogen, blood lactic acid, hepatic glycogen, blood sugar are observed. The results show that, the red beet juice can enhance the swimming durability of mice. The content of blood urea nitrogen and blood lactic acid decrease, and the content of hepatic glycogen and blood sugar increase. The red beet juice has anti-fatigue effect in mice, especially the high-dose group. Betaine in red beet juice can enhance the swimming durability of mice. The content of both blood urea nitrogen and blood lactic acid decrease, and the content of hepatic glycogen increase. The content of blood sugar almost has no change. Betaine is one of the main active ingredients in red beet juice on anti-fatigue in mice. |
