With the rapid development of industry such as chemical industry, food industry, pharmaceutical industry, the demand of fermentation product is also continuously increasing, so is the scale and variety of the production. As a result the requirements to the quality of the wine fermented products is also more and more high, and the demand for the fermentation process monitoring control development is becoming more and more strong. Therefore, inventing a control technology, which is consistent with the complex fermentation process, is very helpful to expanding production scale and improving the quality of products.This study makes the wine fermentation temperature control system as the research object. On the basis of summarizing the existing wine fermentation temperature control mode and control network, this paper advances to take the PROFINET industrial Ethernet as the control network, and use the method of bus control to build wine fermentation temperature control system. The communication and transmission speed of real-time PROFINET industrial Ethernet is superior to the traditional control network, and it also has guaranteed the security. So PROFINET is the first selection of wine temperature control network.At the same time, this paper also studies on the selection of hardware and the communication methods of PLC in the PROFINET control system. Hardware mainly choose S7-300 series PLC (configuration PS307 power supply module, CPU313C - 2 dp, SM321/SM322 DI/DO, SM331/AI/AO SM332 function module), WZP-230 pt100 platinum thermal resistance temperature sensor, YuDian AI-518 artificial intelligence temperature controller and IE/PBLINKPN10 gateway, which can basically satisfied the requirement of wine fermentation temperature control system. It uses STEP7 to configuration the PLC and other hardware, chooses the OPC server mode as the communication method of PLC, finally completes the whole design of the wine fermentation temperature control system.In terms of temperature control theory, in view of the fermentation temperature which has big time lag, time-varying, and coupling characteristics, it respectively analyzes the advantages and disadvantages of the traditional PID control, fuzzy control and neural network control methods in the fermentation temperature control system. This paper advances to use the control method which combine artificial colony theory and traditional PID control method, and has carried on the simulation analysis on relay feedback method and the fuzzy control parameters. It has already proved that using the artificial colony theory to optimization the PID parameters is feasibility and has a strong advantage, completely can be used as the fermentation temperature control method in wine fermentation temperature control system.
