【Objective】To explore the anticariogenic activities of Rubrus suarissimus S.Lee extract and possibility to use as a sugar subtitute.【Methodes】The effects of Rubrus suarissimus S.Lee extract on the growth and glass rod adhering of Streptococcus Mutans were investigated turbidimetrically by measuring the optical density of the culture at 540nm. The acid fermentability of Streptococcus Mutans in the presence of Rubrus suarissimus S.Lee extract was determined by measuring the pH of the culture. Sucrose, glucose, maltose, fructose and xylitol were designed to compare with Rubrus suarissimus S.Lee extract.【Results】The growth and fermentation of Streptococcus Mutans in Rubrus suarissimus S.Lee extract were significantly lower than those in the other groups except for Xylitol(P<0.01). Streptococcus Mutans adhering glass rod in the presence of sucrose was significantly more than those in the other groups(P<0.01).In all groups, Streptococcus Mutans adhering glass rod in Rubrus suarissimus S.Lee extract was the lowest. Glass rod adhering andacid production of Streptococcus Matans with sucrose were evidently reduced by Rubrus suarissimus S.Lee extract. There was no statistical difference in anticariogenic properties between Rubrus suarissimus S.Lee and Xylitol.【Conclusion】These results suggested that Rubrus suarissimus S.Lee extract was noncariogenic and anticariogenic. It is promising as a sugar subtitute.
