Iodine is one of the indispensable elements of the body, the intake of iodine is inadequate or excessive for a long time, which may lead to iodine deficiency disorders (IDD) and iodine excess disease (IED). Food is the main sources of iodine absorbed by body, accounting for about 80 to 90 percent of the totals. Therefore, the assessment of the level of dietary iodine intake is particularly important. At present, the levels of dietary iodine intake reports about province are still relatively rare in our country. Accordingly, this research based on the investigate result of households' meal structure of Fujian Province, collected main food sample and measured the iodine content of different types of food by cooked and mixed, using total diet study method .The safety of dietary structure and daily intakes of iodine of residents at different areas in Fujian Province were evaluated and the main intake approach of iodine were discuss, which will be useful reference to human health and be accepted as fundamental data of recommendations for prevention, treatment and management of related diseases by iodine. The main results of this study were as follows:1.In the future,the dietary structure of residents in Fujian Province should be emphasized on adjusting and optimizing. Residents need to raise consumptions of vegetables, beans, dairy, especially consumption of milk, reduce consumptions of animal meat, aquatic products.If we analyzed in regional terms, on these basis, the coastal city residents also need to increase cereal, eggs intake; the coastal residents of rural areas, still need to increase adequate intake of fruit and eggs, in addition to increasing the intake of cereals. The consumption of cereals needs to be improved for the mountainous city residents; the mountainous rural residents need to increase fruit and egg intake.2.The intake of dietary iodine of residents in Fujian coastal cities, coastal villages and mountain urban, mountain rural per reference man per day were: 234.4μg/d, 347.1μg/d,328.4μg/d,465.3μg/d, respectively .They all meet the RNI requirements, the results showed that the iodine intake of the residents of Fujian Province can fully meet the daily needs, and was lower than the UL values formulated by the WHO, ICCIDD, and UNICEF, which indicates that the dietary iodine intake of the residents of Fujian Province was not only adequate but at a safe level, there was no excess iodine.3.The main food source of dietary iodine of residents in Fujian is salt,then from the kelp, laver and other seaweed foods. The consumption of salt and seaweed make a great impact on dietary iodine, while whether the coastal areas and the intake of seafood had little effect on the iodine intake. Therefore, the amount of iodine in salt and the salt consumption plays a decisive role on the iodine nutrition status of residents in Fujian Province.
