Microbial fermentation has attracted extensive attention of scholars. The optimal control in the field of microbial fermentation has been widely used.This paper mainly consists of the following four parts.The first part is the introduction, mainly introduces two aspects, one is the optimal control problem of the origin and development and its research present situation and research significance; another is to introduce the numerical calculation function of MATLAB.The second part mainly introduces the process of Monascus and yeast fermentation that produce synbiotics, through the improvement of the Monod equation, the application of the maximum principle of optimal control,we get the bang-bang control, and find the numerical solution of the optimal control.The third part mainly introduces the single substrate keratinase production process, the discrete system model is established, and gives the proof of the existence of the optimal control problem, and obtain the numerical solution.The fourth part mainly introduces the process of the production of lactic acid by Rhizopus oryzae, we have solved the semi continuous fermentation of the control problem by means of the maximum principle.
