In recent years, the probiotic bacteria live action more and more be known, with the rapid development of all kinds of food, probiotics soon be applied to all aspects of food, especially dairy products, such as milk, fermented milk, beverage, health food, etc.But probiotic yogurt effect refers to the living and to reach a certain amount of probiotics to have appropriate health care effect, different probiotics in the dairy products shelf period whether can maintain its effective living bacterium quantity for each kind of probiotics are not necessarily.Are the major factors influence the number of living bacterium products production process, packaging, storage conditions, and the choice of probiotic bacteria.This study discusses the factors affecting probiotics to survive in the powdered milk, the speed up the best experiment conditions were determined, and based on the regulations of the state, several kinds of probiotics in the normal temperature test and accelerated test, for different strain condition of survival in infant formula milk powder, comparing the stability of the different strains of probiotics, select add in milk powder in the ideal strains, and adding process of probiotics is optimized, finally through the acceleration experiment to optimize certain condition is verified;Finally according to change milk powder and dry mixing process of probiotics and the effect of environmental factors in the design of experiment the probiotics supplement add packages and compares the dry mixing added.Through the study of the water activity of different batches of milk powder test showed that the milk powder water activity, usually between0.18-0.25.Look from milk powder accelerated test results, the acceleration of probiotic infant formula the choice of test temperature should be below45℃, this will avoid the change of the milk powder interference with live probiotics.The infant formula milk powder than2paragraphs1and3period of infants and young children formula milk powder were more sensitive, so accelerated test option1period of infant formula milk powder for the test results more representative.Study found that are stored in temperature45℃,60℃, under the condition of37℃and25℃, compared with other probiotic strain, Bb-12in infant formula in the paragraph1,2and3show the strongest stability, stability of four kinds of probiotics in infant formula milk powder is followed by Bb-12>LGG>HN019, accelerating test predict the shelf life of milk powder probiotics change and production, Bb-12first consideration as a probiotic strain, the probiotic HN019and LGG can be add strains in infant formula milk powder production, lactobacillus acidophilus (NCFM) can be used as paragraph2and3period of infant formula milk powder to add strains, Bi-07stability is bad, not suitable for adding in infant formula. By probiotics in infant formula milk powder on the impact of environmental factors on number of living bacterium single factor experiment, the best condition of the accelerated save test as follows:the temperature of37℃, humidity is45%, water activity is0.17, save time for a month, or every other day for three days testing time, light has little effect on the stability of probiotic milk powder, when the temperature is constant, the influence of illumination can be neglected.In determining the best accelerated save test conditions, the formula of probiotics to add validated process optimization conditions, the results showed that the best dry mixing process to optimize the conditions for:the temperature of the blending workshop should be25℃, relative humidity is45%, the mixing time of25min;To optimize the conditions for the best packaging process:the product should fill nitrogen gas, tin can packaging, and sealing is very good.Accelerated testing to determine the best conditions, four kinds of probiotics in infant formula milk powder add validated process optimization conditions, the results showed that the best dry mixing process to optimize the conditions for:in the case of ensure uniform mixing, the mixing time should be25min or less, the temperature of the blending workshop should be25℃or less and relative humidity should be50%or less;To optimize the conditions for the best packaging process:the product should fill nitrogen gas, tin can packaging, and sealing is very good.In determining the best accelerated save test conditions, the probiotic supplements can effectively reduce the number of living bacterium because dry mixing process of probiotics and the effect of improved probiotics the number of living bacterium number in infant milk powder, milk powder in the shelf life of itself change will not affect the number of living bacterium probiotics completely;Probiotic supplements to eliminate due to high water activity of probiotic strain limit factor, reduce the water activity of probiotics the number of living bacterium, extended the probiotics the preservation of the number of living bacterium stable quantity and time.
