Infant formula milk powder is an important food to meet the nutritional needs of infants and young children.In recent years, the safety events of infant formula milk powder occurred frequently, causing great harm to family and society. Therefore, strict risk control of infant formula milk powder has become the consensus of the governments and scientific researchers in the world.The constant and trace element can maintain normal life activities for human, but excessive or insufficient intake of them will be harmful to human health. In addition,heavy metal pollution is a major factor to affect human health, and thus it has increasingly gained people's attention. For such reasons, efficiently controlling element contents and carrying out risk assessment of elements in infant formula milk powder are significantly important.In this study, by taking the infant formula milk powder as the research object, we analyzed the sources of risk and the limit value of elements, initially established the risk index system for elements verified, the applicability and reliability of detection method for risk indicators,and drew some conclusions.The analysis of risk indicators includes the investigation of sources,index limit and index detection.In infant formula milk powder, the risk of elements comes from raw milk and processing. Stipulating, improving and following the index limit value are key to reduce the level risk.The risk indicator limit value of elements should refer to the upper limit stipulated in the domestic and international food safety standards. Detection methods for risk indicators should basically follow legislation drafted by the national standards organizations.Atomic absorption spectrometry (AAS)was applied to the determination of K, Ca, Na, Mg, Fe, Zn, Cu, Mn, Pb and Cd in infant formula milk powder. The correlation coefficients of the standard curves were above0.999,showing a good liner relationship.The content of eight constant and trace elements was determined by FAAS,the spiked recoveries were87.5%~112.12%,and relative standard deviations(RSDs) were0.51%-4.83%;when the content of Pb,and Cd was determined by AAS,the recoveries were100.00%~116.00%,and RSDs were0.89% and1.24%,respectively.The results show that the method achieves good accuracy and precise in determining element content in infant formula milk powder.The characteristic concentration of eight elements was determined by AAS.The characteristic concentration value of each element except Na was relatively low(less than0.4μg/mL).The characteristic concentration values of Pb and Cd were0.00657μg/mL and0.01737μg/mL, respectively. The results shows that the detection sensitivity of this method is good.During storage at room temperature and accelerated testing, by FAAS, GB5413.22—2010and GB5413.24—2010methods,determination results of K,Ca,Na, Mg, Fe, Zn, P and Cl in infant formula milk powder (0-12months of age) were stable, showing that these inspection methods have good stability and applicability and can be used as a detection method for the risk analysis during storage and sale part.
