Objective: Comprehensive understanding of the 《Standards for Uses of FoodAdditives》(GB2760—2011)、《Standards for Uses of nutritional fortificationsubstances in foods》(GB14880-2012)、《Pollutant limits in foods》(GB2762-2005)、《Mycotoxins Limits in foods》(GB2761-2011)Four national food safety standardsApplication in Hunan Province;Understanding food supervision,inspection andtechnical staff knows and understand the extent of three types of standards。Methods and content:(1) choose14states in Hunan Province engaged in food safetyregulators,food inspection and testing personnel and production and processingenterprises related personnel selected for the survey(Hereinafter referred to asregulators,inspectors, technicians)。In the province’s14prefectures health oversightagencies each selected one specific person as a person in charge of the project survey,And centralized training.So that they fully understand the contents and methods ofinvestigation,Known interpretation of each entry,then simulate the pre-site survey,So that every person involved in the investigation of the project to fully grasp thesurvey methodology。Investigation by the person in charge of the city state project toconvene meetings of all respondents were sampled to determine,Each questionnairefocusing on the understanding of the content approach,Fill methods and precautions,After each confirmed by investigators in no doubt,then everyone is filled the surveyquestionnaire independent。(2) Food safety regulators phased composition of thesupervising officer;Different attributes of food inspection and testing personnelagencies composition; Food production and processing enterprise personnelmanagement department composition.Survey on four national food safety standards ofknown cases;Understanding of the situation;Recognition case。Results:1. The four national food safety standard survey,Issued a total of5200copiesof the questionnaire,and4563valid questionnaires were recovered。2297copies of which engaged in food safety regulators,Engaged in816parts of food safetyinspection personnel,1450copies engaged in food production and processingenterprises staff,Accounting for50.34%,17.88%,31.78%。2. The survey showed that,the highest awareness rate of the four nationalstandard is《Standards for Uses of Food Additives》,about93.40%,lowest is《Usingstandards of food nutrition fortifier》about77.46%;the highest rate of Understandingis 《Mycotoxins Limits in foods》about96.93%;lowest is《Standards for Uses ofnutritional fortification substances in foods》为71.75%;The highest recognition rateof the national standard s《Mycotoxins Limits in foods》为88.45%,lowest is 《Usingstandard of food nutrition fortifier》about64.44%。3. Three categories of staff to 《Standards for Uses of Food Additives》(GB2760—2011)total known rate is93.40%,technical staff awareness is the highest96.22%,supervisory staff awareness is the minimum91.40%。Three categories overall understanding of the standard rate is82.43%,technical staff awareness is thehighest89.49%,supervisory staff awareness is the minimum78.07%。4. Three categories of staff to《Standards for Uses of nutritional fortificationsubstances in foods》(GB14880-2012)total known rate is77.46%,technical staffawareness is the highest83.12%,supervisory staff awareness is the minimum75.99%。Three categories over all understanding of the standard rate is77.46%,technical staff is the highest83.12%,supervisory staff is the minimum75.99%。5.Three categories of staff to 《Pollutant limits in foods》(GB2762-2005)totalknown rate is93.02%,inspection and testing personnel is the highest95.39%,supervisory staff is the minimum91.40%。Three categories over all understanding ofthe standard rate is94.13%,inspection and testing personnel is the highest96.23%,technical staff is the minimum93.60%。6. Three categories of staff to《Mycotoxins Limits in foods》(GB2761-2011)totalknown rate is93.02%,inspection and testing personnel is the highest95.35%,supervisory staff is the minimum91.25%。Three categories over all understanding ofthe standard rate is96.93%,inspection and testing personnel is the highest98.14%, technical staff is the minimum96.37%。Conclusions:1. Food regulators,inspectors, technicians of Hunan to four nationalfood safety standards for tracking evaluation《Standards for Uses of Food Additives》(GB2760—2011)、《Pollutant limits in foods》(GB2762—2005)、《MycotoxinsLimits in foods》(GB2761—2011)three criteria have higher rates of awareness andunderstanding,to《Standards for Uses of nutritional fortification substances in foods》(GB14880—2012) awareness and understanding of the rates are lower。2.Hunan Food regulators、Inspectors、Technical staff of Hunan on four nationalfood safety standards are low recognition rate,Specifically to《Standards for Uses ofFood Additives》(GB2760—2011),《Standards for Uses of nutritional fortificationsubstances in foods》(GB14880—2012) two standard about35%of people do notrecognize。3.Food regulators,inspectors,technical staff have a Low recognition rate of12limited indicators《Pollutant limits in foods》(GB276—2005).And technical staff onlyhave high recognition about PCBs limit indicator.Meantime,technical staff have thelowest recognition of limited value index about 《Mycotoxins Limits in foods》(GB2761—2011).4. In some common foods presence or contaminants the limit of mycotoxins inquestion is more or less exceeded in Hunan Province,Excessive or over-range orabuse of food additives and food nutrition fortifier phenomenon is more prominent,The right to all levels of government must pay close attention and food regulatoryauthorities,strengthen the food from farms to table regulatory orientation,and ensurefood safety。5. Food contamination limits of certain heavy metals and carcinogens indicatorsand certain mycotoxins in food index limit class professional and technical personnelfrom three different angles,made a number of amendments and recommendations,Worthy of attention concerning standards department。...
