Since its inception in 1843 Shanghai, Shanghai developed from a small fishing village up traditional southern treaty port citiesforeign trade, industry, commerce, culture and so on rapid development, until an international metropolis, known as the "Paris of the East." Prosperity and political stability on the Shanghai economy, attracted a large foreign population, the continuous influx of migrants, so that Shanghai is not only brings together the various regional Chinese cuisine, but also the first to pass the exotic diet-Western. For Shanghai, with the development of the city, along with flourishing catering, food and urban life or the life of the relationship between the city’s economy and especially the close. Among them, the most Shanghai is the geographical and cultural characteristics of the local cuisine, and local cuisine, the most famous is the "old restaurant local cuisine." 2014, Shanghai Old Restaurant local cuisine cooking skills successfully passed the national intangible cultural heritage declaration diet classes, their skill after the Five Dynasties heritage, have distinct cultural change characteristics. This thesis from the perspective of folklore old hotel Shanghainese cooking skills, purpose of production and consumption by local cuisine, explore local food culture that has reason to pass on Chengxiang and are famous. Shanghai local food culture also permeates every aspect of life, therefore, the development of Shanghai’s changes also can find a trace from the diet in Cultural Change.
