The study about fermentation and enzyme technology to improve the utilizationof cottonseed meal.Strains in which can reduce the content of free gossypol and increase crudeprotein content are filter from laboratory deposited strains. Bacterias are use tofermentate cottonseed meal. By single factor, uniform design and response surfaceanalysis experiments, the best of fermentation conditions can get.Screening enzymefrom these four enzyme mixture that papain + cellulase, alkaline protease + cellulase,acid protease + cellulase and Flavourzyme + cellulase can improve the degree ofhydrolysis of cottonseed meal, reduce cellulose conten of cottonseed meal and haslittle impact on the free gossypol of cottonseed meal. Compared to two differentprocesses which enzymatic and fermentation simultaneously and first fermentationand the enzymatic. Elect the best processe. The main findings are as follows:(1) Crude protein content in cottonseed meal is 50.28%. Crude fiber content in cottonseed meal is 12.04%. Crude fat content in cottonseed meal is 1.4%. Ash content in cottonseed meal is 6.75%. Dry matter content in cottonseed meal is 89.00%. The content of free gossypol in cottonseed meal is 814 mg / kg. Using analyzer measure the content of amino acids in cottonseed meal. Cottonseed meal contains amino acids which are necessary in animal, but the composition of amino acid is not balance.(2) By strain screening test, mixing Candida tropicalis and Candida production can reduce the amount of free gossypol and increase crude protein content. The optimum conditions for fermentation is that temperature fermentation is 35 ℃, fermentation time is 36 h, solid-liquid ratio is 1:0.75, material ratio is 4:1, Candida tropicalis: Product Nguyen Candida = 1: 2, inoculum amount is 5%,and gossypol in cottonseed meal was 200.763 mg/kg. However, depending on the experimental conditions, Fermentation conditions are that fermentation temperature is 35 ℃, fermentation time is 36 h, solid-liquid ratio is 1:0.75, material ratio is 4:1, the proportion of Candida tropicalis and Product Nguyen Candida is 1: 2, inoculation amount is 5%. The result of the free gossypol content in the fermentation cottonseed meal is 202.33 mg / kg.(3) Enzymatic and fermentation simultaneously is better to improve the nutritional quality of cottonseed meal. Fermentation conditions are that the proportion of papain and cellulase is 1: 1, the level of enzyme is 1%, the fermentation temperature is 35 ℃, the fermentation time is 36 h, the solid-liquid ratio is1:0.75, the material ratio is 4:1, the proportion of Candida tropical and Product Nguyen Candida is 1: 2,and the inoculation amount is 5%. Result is that gossypol content of cottonseed meal is 218 mg / kg, the degree of hydrolysis of cottonseed meal protein is 17.03%, crude fiber content is 4.69%.
