To evaluate the safety of tofu waste water brine and chitosan, this study based on ammonia nitrogen, chemical oxygen demand(COD), biochemical oxygen demand(BOD) to evaluate the water pollution situation, through the oral acute toxicity test in mice, Ames test, mouse bone marrow micronucleus test and mouse sperm malformation test, 30 天 feeding test, comprehensive evaluated the edible security of the tofu waste water made from brine and chitosan.The research results showed that the tofu waste water made from chitosan were actual non-toxic. The bone marrow micronucleus test, Ames test and mouse sperm malformation test showed that the tofu waste water made from brine and chitosan had no teratogenic and mutagenic effect, however, frequencies of micronucleus in bone marrow PCE and sperm deformity rate were slightly higher with tofu waste water made from brine than chitosan under the same doses,there was no significantly difference from normal mouse.30 days feeding test, tofu waste water made from brine could induce the loss of rat weight, however, it had no effect on food utilization, routine blood, blood biochemical index and ratio of dirty body index, and there were some abnormal changes of liver and kidney. There were no effect on the rats weight, food utilization, blood routine, blood biochemical indexes, and there were no obvious abnormal morphology in liver, kidney, spleen, high dose group of could significantly increase the spleen coefficient.Therefore, tofu waste water made from chitosan was safe non-toxic, no teratogenic, mutagenic effect, the safety was higher than tofu waste water made from brine. The pollution situation of tofu waste water made from chitosan was slightly better than tofu waste water made from brine, thus, it should be pretreated effectively before the further development and utilization.
