Neutral cereal stiff paste is a new type of cereal food and drink, which is made of natural oats, buckwheat, sesame, peanut, and brown rice. Neutral cereal stiff paste riches in vegetable protein, and its pH value is about6.8. It is China’s unique product, meets the need of "2006-2016national food industry development of science and technology outline", so it has a bright market prospect in China.Firstly, we study the formula of neutral cereal stiff paste by means of orthogonal experiment and fuzzy evaluation. The results showed the optimal formula of Neutral cereal stiff paste is:oats2.6%,1.5%, peanut sesame seed1.2%, brown rice to add quantity0.5%, buckwheat0.3%, xylitol0.5%. According to the above formula, Neutral cereal stiff paste product is milk-white, colour and lustre is uniform, organization is exquisite, smooth taste, coordination, corn fragrance is full-bodied. Subsequent research is based on the above formula and products.Grain materials carry more microorganisms, especially spore bacillus more difficult to be inactivated. In order to achieve commercial sterilization of neutral cereal stiff paste, eventually scale production of Neutral cereal stiff paste utilized sterilization after spore activation process. The results showed, without adding any preservatives conditions, activation of spore by75℃30min, then134℃16s ultra high temperature (UHT) sterilization, can killed microorganisms, ensured commercial sterility and the safety of Neutral cereal stiff paste product. At the same time, the sterilization process can reduce the UHT sterilization strength and protect taste and nutrients of the products.In order to improve the stability of the products,0.3%commercial protein stabilizer was added in the Neutral cereal stiff paste. After90℃60seconds protein stabilization, the Neutral cereal stiff paste can be stored at room temperature for270days without precipitation. Meanwhile, this procedure can also reduced the UHT paste tube phenomenon and cleaning time of UHT equipment, prolong the cleaning period, improve production efficiency.Above all, the Neutral cereal stiff paste whole production technology and route is as follows:raw material pretreatment to coarse grinding paste→cooking→fine grinding slag slurry (80-100mesh)→plasma separation→stabilizing treatment→allocate the capacity→75℃,30min bacillus activation→degassing→40mpa homogeneous←cooling staging→temperature degassing→20mpa homogeneous→90℃,60seconds to protein stability→134℃,16seconds sterilization→aseptic filling→finished products.Finally, enterprise criterion of the grain beverage was drafted, including regulation of corn beverage technical requirements, test methods, inspection rules and signs, packaging, transportation, storage and shelf life requirements, etc.
