Recently, the research and development of Ligularia plants more and more caused by researcher its wide attention due to Ligularia plants have biological activities. The main nutrient content, trace nutrient, flavonoids compound and volatile oil content of the three Ligularia plants from the region of changbai mountain were ananlised and determinated in this paper. As a result provides scientific basis and reference for the development of wild vegetables and protection to natural resources of Ligularia in Changbai Mountain. It is of great both theoretical and scientific researches significance.The content of the main nutrient components such as the crude protein, crude fat, crude fiber, carotene, vitaminC, trace nutrient such as zinc, manganese, phosphorus, flavonoids compound and volatile oil content of the the Ligularia jaluensis, Ligularia intermedia and Ligularia fischeri from the region of changbai mountain were determined and ananlised, the results re as follows:1There are differences in nutrient content of the three Ligularia plants,nutritional contents of leaves of Ligularia fischeri were the highest, reached12.9%. The content of cude fat varies significantly among the three Ligularia plants, Ligularia jaluensis contains crude fat2.5%that was2.5-5times than other samples. The highest content of crude fiber in Ligularia ntermedia content up to18.02%. Sample sugar content is not high, sugar content of the three Ligularia plants in ascending order from the complex sequence Ligularia fischeri highest. Three Ligularia plants contain a wealth of vitamin C, which Ligularia ntermedia for98.35mg/100g. the highest of carotene per hundred grams of dry weight content was Ligularia fischeri which to achieve14.7mg/100g. Phosphorus content in three Ligularia plants was richer than that of other mineral elements, Ligularia fischeri contains phosphorus highest and the content of manganese and znic in Ligularia ntermedia was higher than other two plants2The three Ligularia plants is abundant in amino acids,the total content of the amino acid in Ligularia ntermedia was the highest,reach12.6%. In this thesis,the amino acids containing7kinds of essential amino acids,the analysis of high essential amino acids content in three Ligularia plants,more than40%, essential amino acids of Ligularia jaluensis in the proportion of the maximum up to44.09%. The content of essential amino acids, freshness amino acids and bitterness amino acids was also decreased, the change of range was as follows:42.36%â†'44.09%,30.97%â†'32.29%,23.59%â†'26.93%. Three Ligularia plants taste to bitter,bitter and sweet, delicious taste and have high nutritional value.3Using ultrasonic extraction methods, total flavonoids was extracted from three Ligularia plants and in sequence of the optimal extraction conditions and the maximum extraction rate were studied by orthogonal experiment. the results are showthat:total flavonoids in Ligularia jaluensis optimum extraction conditions for the best extractive craft were:30min of supersonic time,temperature of60℃,1:35liquid and solid ratio,75%alcohol, the best extractive ratio achieved8.13%. the optimum extraction condition of the total flavonoids in Ligularia ntermedia obtained was:30min of supersonic time, temperature of60℃,1:30liquid and solid ratio,75%alcohol, greatest extractive rate was4.83%. the optimum extraction condition of the total flavonoids in Ligularia fischeri obtained was:30min of supersonic time, temperature of60℃, 1:30liquid and solid ratio,75%alcohol, greatest extractive rate was5.67%.4The volatile oil of three Ligularia plants were extracted by vapor extraction, solventextraction, ultrasonic assisted extraction and the result showed that different methods of quantitative determination make a great difference in results. Volatile oil by vapor extraction was pale yellow, oil yield was the lowest but contained fewer impurities.the other four methods to extract the volatile oil was the color browns and contains impurities.The oil extraction efficiency yield by ether extraction was highest, which in Ligularia jaluensis up to2.547%, in Ligularia intermedia up to2.547%, in Ligularia fischeri up to1.546%. The vapor extraction consumed the longest time and need to6h,ultrasonic assisted extraction consumed the shorttest time and need to1.5h.
