The postharvest storage and preservation of Lingwu long jujube have already obtained obvious effect, which improved the storage value. Lingwu long jujube used throughout this work was obtained from Ningxia as material, the quality changes and discipline of oxidative aging was investigated on different maturity of fruits treated with1-MCP during storage and MAP package. In order to evaluate the bioavailability about the main active substance ascorbic acid (Vc) during the process of digestion and absorption in the body via simulating to the body’s digestive system, simultaneously, the influence of preservation measures on the bioavailability, and the relationship of fruit quality and bioavailability was researched. Then determined the best preservation conditions of Lingwu long jujube in maintaining the maximum length of nutritional value and nutrient’s utilization in the body while ensuring the quality of fresh fruitFruits was treated with1-MCP fumigation and packaged with KDM film, so the decline of fruit quality and the oxidation aging was significantly delayed owing to inhibition of endogenous ethylene production; furthermore, the digestion and absorption of nutrients was not affected, bioaccessibility of Vc was better maintained at17.5%, the descent of utilization and antioxidant capacity was inhibited to some extent.It was showed that the appropriate harvest maturity is benefical for maintaining the quality and inhibiting oxidative aging, the emergence of the peak of antioxidant enzymes activity is also postponed; although the quality and flavor slightly lower than those of the full red jujube at beginning of storage, the total phenol content and DPPH. scavenging rate were respectively remained at93.4μg/100mg and43.2%on later of storage, which were significantly higher than those of the ripended fruits entered the senescence period; in addition, bioaccessibility of Vc behaved stability at17.2%during the whole storage stage, and not declined in anaphase.Experiment about jujube in shelf life before and after storage showed that fruits preserved can still maintain good storability during the circulation; moreover, the content and activity of nutrient of fruits were at a high level, and the bioaccessibility of Vc was also of stability.Through a series of studies about storage measures and the determination of the indicators, it was confirmed that the1-MCP and KDM film packing would not impact absorption of nutrients, but was beneficial to maintaining its bioaccessibility. Moreover, the higher quality fruits have, the more stable the nutrient content and absorption.
