| Agaricus bisporus is rich in proteins, polysaccharides and mineral substances and has high nutrition value and healthy function for human body. However, because of its tender structure, high water content, it is easy to suffer from mechanical injury, and then microorganisms find the way to invade and cause it deterioration. In this dissertation, Agaricus bisporus were taken as experimental material.Their storage properties and effects of different fresh keeping technologies on their storage qualities were studied. The main research content and corresponding results were summarized as follows.1. Influences of ClO2treatment on quality and postharvest physiology of Agaricus bisporus were researched in the experiment. Under the cold storage at0℃, Agaricus bisporus were treated with ClO2interval with the concentrations were0.05ã€0.1ã€0.3*10-4g/kg respectively and successive ClO2treatment with low concentration of0.1*10-4g/kg. The result showed that successive ClO2treatment and ClO2interval treatment with0.1*10-4g/kg ClO2can restrain respiration rate and the decrease in the firmness, deoxidized sugar and total sugar, while maintain the species and content of aroma in Agaricus bisporus and extend the shelf life without loss in quality.0.1*10-4g/kg storage reduced rotten exponent of Agaricus bisporus, kept better quality and flavor, and this storage can significantly maintain Agaricus bisporus aroma components. The test also found that the effect of cold storage with intermittent ClO2treatment was better than cold storage, and storage had remarkable effect compared with cold storage with intermittent ClO2treatment.2. In addition, The0.1*10-4g/kg ClO2treatment decreased concentration of membrane penetrability, slowed down the browning degree, thus kept the storage quality. But ClO2treatment increased the activity of PPO (polyphenol oxidase). Compared and contrasted with intermittent ClO2and cold storage with storage, the effect of cold storage with intermittent ClO2was inapparent and common storage was the worst.3. Isoenzymes of esterase and polyphenol oxidase in Agaricus bisporus species was analyzed by perpendicular plate discontinuous polyacrylamide gel electrophoresis. The results showed that there were4bands for polyphenol oxidase. Different species of Agaricus bisporus had different isoenzyme patterns. |
