| Agaricus bisporus is popular with consumers around the world,because of it’s white color and tender,delicious and nutrient-rich.But Agaricus bisporus has a strong respiration and no cuticle protection,so after harvest it is easy to loss water,browning,infect microbial and so on,which will affect the quality of sales.Ethanol is a naturally occurring secondary metabolite of organisms,has a good bactericidal effect.Appropriate amount of ethanol has a good effect on fresh-keeping.Firstly,Agaricus bisporus was treated by different concentrations of ethanol fumigation,then analyzed the effect of different concentrations on physical and chemical properties,nutritional indicators and microbial growth of Agaricus bisporus,and determined the best concentration of ethanol.Then,further studied the mechanism of ethanol fumigation to maintain a better whiteness,aiming at the browning phenomenon of postharvest Agaricus bisporus,.Secondly,for the practical problem of people who was not convenient to treatment Agaricus bisporus before storage,or needed to save a few days unified treatment,then ethanol fumigation treatment was carried out on Agaricus bisporus at different storage times,to study the effect of quality of Agaricus bisporus on its earlier storage or later storage.Finally,the effect of ethanol fumigation compound with 1-MCP treatment on keeping quality of Agaricus bisporus was studied.The main conclusions were as follows:1、Agaricus bisporus was treated by 200、400、600 μL/L concentration of ethanol fumigation,the effects of different ethanol fumigation concentration on the storage quality of Agaricus bisporus were studied.The results showed that ethanol fumigation could inhibit the respiratory intensity,slow weight loss rate and the increase the total bacterial accounts;Maintain high soluble solids,protein,Vc content and more stable free amino acid contents;Maintain high whiteness,hardness and sensory evaluation;But it had a lower total phenol content.In general,400 μL/L concentration treatment group the best preservation effect.2、Agaricus bisporus was treated by 400 μL/L concentration of ethanol fumigation,the mechanism of ethanol fumigation of maintaining a better whiteness was studied.The results showed that ethanol fumigation could inhibit the superoxide anion production rate,the relatively conductivity rising,PPO activity,POD activity,PAL activity and the total phenol content of the substrate,which could inhibit the enzymatic browning of Agaricus bisporus;Inhibit the increase in reducing sugar and amino acid content,which inhibition of non-enzymatic browning caused by carbonylation;Inhibition of weight loss and Vc reduction caused by non-enzymatic browning;Inhibit the growth of microorganisms,which reducied the occurrence of brown spot.The factors above made the Agaricus bisporus maintain a good whiteness value.3、Agaricus bisporus were treated with ethanol fumigation before storage(0 day),earlier storage(4 day),and later storage(8 day),the effect of ethanol fumigation on its quality at different storage times were studied.The results showed that,earlier storage treatment group,could maintain a lower respiration,relative conductivity,total phenol contents and total bacterial accounts;Inhibit PAL,PPO,POD activity;Maintain high whiteness and sensory evaluation;Compared with before storage treatment group,earlier storage treatment group could better inhibit the later storage of Agaricus bisporus respiration,but it was not as good as the before storage treatment group in inhibiting PAL activity and maintaining hardness.Treatment of Agaricus bisporus at later storage,could better inhibit the activity of PPO at the end of storage,but the overall effect was less than before storage treatment group,and there was no difference in respiratory,whiteness,hardness,and sensory evaluation compared with the control group.So,it was best to choose to earlier storage to treat Agaricus bisporus,and the preservation effect of Agaricus bisporus was not obvious if choosing the later storage treatment,when people was not convenient to treatment Agaricus bisporus before storage,or needed to save a few days unified treatment.4、By the combination of ethanol fumigation and 1-MCP treatment,the effect of fresh-keeping on Agaricus bisporus was studied.The results showed that,compared with the ethanol treatment group,1-MCP treatment group could better inhibit the respiration rate of Agaricus bisporus at the later storage stage,and there was no significant difference in the relative conductivity between the two groups,but other indicators were worse than the ethanol treatment group;Compound treatment could better inhibit respiratory,the weight loss rate,the relative conductivity and the microbial growth,inhibit the degradation of Vc,maintain better whiteness value and sensory evaluation.However,there was no significant difference in the total phenol contents between the ethanol treatment group and the compound group.In conclusion,the three treatments were able to maintain the storage quality of Agaricus bisporus,and the composite group was the best.In conclusion,ethanol fumigation treatment could maintain Agaricus bisporus a good storage quality and nutritional quality,significantly reduce the total bacterial counts,and could inhibit the enzymatic browning and non-enzymatic browning of Agaricus bisporus,which could maintain its a good whiteness.Before or earlier storage treatment could better maintain the quality of Agaricus bisporus,and the later treatment of storage had little effect on its quality when treated the of Agaricus bisporus with ethanol at different storage times.So,it was best to choose earlier storage to treat Agaricus bisporus,when people was not convenient to treatment Agaricus bisporus before storage,or need to save a few days unified treatment.Ethanol compound 1-MCP treatment could combine the advantages of both treatments,and could better maintain the quality of Agaricus bisporus.In summary,the ethanol fumigation treatment has a certain value on the preservation of Agaricus bisporus,it also has a certain reference significance in the preservation of other edible. |
