Undaria pinnatifida Suringar is a kind of perennial economic and large brown algae. China is one of the biggest production country. Undaria sporophyl is rich in nutrients. Its water-soluble polysaccharides have significantly physiological functions in the reducing blood fat, improve immunity and antineoplastic etc. It is an area of great promise in the development of hypoglycemic drugs and function food.In this article, Undaria sporophyll was used as raw material. Water extraction, compound enzyme extraction were used to extract polysaccharide. Polysaccharides extract fluid was deodorized through activated carbon,β-cricoid dextrin and yeast fermentation. And clarification of the deodorized polysaccharides extract fluid is also primary studied. The results are as follows:1. For water extraction,50 times more water was added in a certain amount of Undaria sporophyll, the extraction yield reached 3.015% after extracting 4h, at 90℃. For enzyme (cellulase, pectase, benase) extraction,5% water (power/add to water) was added in a certain amount of Undaria sporophyll. And the extraction yield reached 4.201%, when enzyme/power is3%, pH is 5.0, temperature is 50℃, after extracting 3h.Based on the extraction yield, enzyme extraction was chosen as method for the following experiment,2. For the deodorization of polysaccharides extract fluid, yeast fermentation exhibited best effect on deodorization as well as special aroma of yeast fermentation. The optimal experiment conditions for polysaccharides extract fluid deodorization are as follows:5% maltose was added in a certain amount of polysaccharides extract fluid,10% yeast wasinoculated in 250 mL Erlenmeyer flask with 90 mL liquid medium, After 42h’s fermentation, the fishy-smell was basically removed and the contents of polysaccharide can reach 167.09 mg/100ml canister, acidity reach 1.285%, when pH is 4.5, temperature is 35℃.Centrifugal was determined as the best way to clarificate by comparing the results of chitosan and enzymatic of deodorization of polysaccharides extract fluid. The optimum centrifugal clarify conditions is 4000r/min,12min, when light transmittance can reach 61.1%.
