Beer fermentation process is a typical example of biochemical reaction engineering, different from other industrial processes, Beer fermentation process based on different enzyme activity will be divided into different stages, and the fermenter bulky, long duration of fermentation, so that the fermentation process time-varying, nonlinear, large time delay and strong relationship, etc. Led to the traditional control method to this kind of control object of the control effect is not good. Therefore, how to effectively The improving of the traditional beer production control programs and, the level of automation and improving the quality and stability of beer production is important to improve production efficiency, to enhance competitiveness and to increase market share of great significance. This paper focuses on the research and design of the temperature control system. The paper’s r the background is the brewery fermentation production line reconstruction project.According to the characteristics of beer fermentation temperature change, the system proposed parameters Fuzzy self-tuning PID temperature control algorithm. The purpose of this study is to achieve adaptive PID adjustment by combining expert experience and fuzzy control theory without changing the premise of the traditional PID control algorithm. Beer fermentation control system establish traditional PID control algorithm and fuzzy parameters self-tuning PID control algorithm simulation comparison using mathematical tools MATLAB/Simulink. The results showed that the fuzzy parameter self-tuning PID control algorithm suitable to be used in the temperature control system of beer fermented with complex changes in characteristics. Because the parameters self-tuning fuzzy PID control algorithm is faster response, overshoot smaller, more robust than the traditional PID control algorithm.Project design based on a programmable logic controller (PLC) of hierarchical control systems to meet the beer fermentation process automation and control of fermentation, centralized management of production line requirements by understanding and fermentation process of beer fermentation process key performance indicators for technical analysis. The system can collect live signal, calculation processing, logic and control algorithms to control the process and the output of the actuator operation command by SIEMENS S7-200 series PLC as a field controller, directly connecting with the field sensors, solenoid valve actuating mechanism. Network monitoring control room side can complete the fermentation process condition monitoring, data management by SIEMENS configuration software WinCC monitor screen design. The composition of the field Controller can be achieved on the fermenter centralized control management system.
