Research backgroundFood safety is one of the major public health problems facing the world, so to ensure food safety is of great urgency. At present, various countries food pollution incident occurred frequently, has caused the world health organization and the relevant organizations and governments attach great importance to. So countries have to prevent food pollution, ensure food security and safeguard the health and rights and interests of consumers as an important national policy. Party’s 18 large report put forward:to improve the level of the people’s health, promote people’s all-round development, adhere to people’s health services, adhere to the prevention, reform and improve the food and drug safety supervision system machine; Also stressed:ensure that people eat satisfied, eat well, to ensure food safety, health, nutrition, improve the quality of human life, is the basic of the people’s livelihood problem. However, our country the status quo is the following several aspects:A, use too much fertilizer to the soil fertilization. Because the excessive use of chemical fertilizer crop absorption of incomplete, by which seep into the ground or surface water into the water body pollution. Antibiotic residues in the food chain enter human body caused by the drug resistance of bacteria, cause harm to human health, in recent years, Europe and other countries the emergence of "superbugs" is this may cause. Not used for food additives including clenbuterol, with poison agriculture, veterinary drug abuse events emerge in endlessly.Research ObjectivesTo understand the status of the taian the major food safety and pollution situation,2013 for Tai’an City in main food pollution condition were investigated, and detection and analysis of health indicators.The main purpose of include:1、Understanding of taian the farmer’s market, small supermarket, large percent of pass of the main foods for sale in the supermarket, pollution condition.2、Percent of pass of different categories, different packaging of food,from production source to circulation field is analyzed on the intermediate links and problems of health management,to explore the relationship between different scale mode of operation and hygiene level.3、For further Tai’an City foodborne disease monitoring to provide scientific and effective basis.4、For Tai’an City food regulators further effective regulation of the government at all levels to provide feasible and effective implementation.Research methodsThis research is mainly descriptive research and survey.Taian county (city, area) through gathering large and medium-sized supermarkets, farmers market representative and typicality and the timing of food samples,according to "Tai’an City food chemical pollutants monitoring plan and laboratory work detailed rules" and "Tai’an City foodborne pathogenic bacteria monitoring program and laboratory work detailed rules" the requirements of the sampling and inspection.Of 17 kinds of food according to the national "food hygiene microbiological test method" and "food hygiene inspection method The physical and chemical testing part,the samples are in accordance with the state of all kinds of food hygiene standard in effect at the judge whether qualified,any samples with a test project is unqualified, then the sample was judged to be unqualified.In accordance with the requirements for collecting and monitoring program of food can be divided into two categories, namely microbial contamination and food chemical pollution analysis,From 2013, the structure of the total food for all kinds of food, according to national health standard to judge the current effective test results,to obtain qualification rate of all kinds of food,using the chi-square test and EXCEL2007 SPSS16.0 software data statistics and analysis.Analysis of food hygiene quality and pollution condition in the region, as well as the circulation link problems that may occur.The results of the studyThe results of the study show that, in Tai’an city in 2013 by pumping 17 samples 965 samples, the total pass rate of 60.5%.The raw fruit and vegetable class percent of pass is lowest,15% of the sample quantity, second bottled drinking water, soy products (fermentation) and vegetables qualified rate is lower than other foods, respectively is 27.5% of the samples,32% and 38%. Analysis from the result of microbial contamination, there’re a total of 795 samples were detected by food microbiological detection, overall situation detection of qualified rate is low, at just 56.98%. Detection of fecal coliform in project, fraction defective is higher, at 60%, followed by the total number of colonies of not qualified rate, at 60.5%. Single type of food, raw fruits and vegetables class qualified rate is the lowest, only 15% of the food, unqualified project detection mainly pathogenic bacteria of e. coli bacteria. Chemical pollution test results as follows:in cadmium, lead, mercury, arsenic detection of the communist party of China 100 samples, the samples of 50 vegetables and 50 copies of food products, percent of pass is 45% of cadmium, lead, percent of pass is 58%, the percent of pass is 84% mercury, arsenic project test results of all qualified;in detection of pesticide residues, samples for the city went to vegetables and raw fruits and vegetables, testing samples for a total of 50, percent of pass is 38%, the qualification rate of pesticide residues of qualified rate is low compared with other food, testing project unqualified project for sulfur method for Dan, strain of pesticides and organophosphorus pesticides; starch products aluminum project detection is the main object, the detection of random sampling samples sold a total of 50. percent of pass is 26%.The suggestion of the studyTai’an City, the food processing industry mostly small workshops and smallscale farming, and the production and rocessing of small workshops in thelevel of industrialization is ow, especiallythe production and processing of non-standard bring greater danger to food safety. Based on the analysis of the results of 17 kinds of food, it is not difficult to see that, microbial pollution is more serious, especially fresh fruits and vegetables,in the detection of microorganisms detected inEscherichia coli.inthepart of infant food (formula) were detected in the detection of Bacilluscereus and Enterobacter sakazakii food borne pathogens in the. Chemical pollution factors.vegetable pesticide residues and heavy metalexceed the standard phenomenon was part of the project is more serious. Overall, the pollution status of chemical factors than microbial contamination is much better.But chemical pollutant factors and microbial contaminants are important factors for occurrence of food borne disease. The detection results to a certain extent, reflects Tai’an City infant food andeating raw fruit and vegetable food is food focus future daily monitoring andcontrol of bacterialfoodborne diseases, commercially available vegetable food in the future is the focus of pesticide residues and heavy metal pollution in daily monitoring and control of chemical food borne disease. Suggestions:one is the city of Tai’an, the food and agriculture relatedsupervision departments should intensify their supervision,strict control of food related, commerciallyavailable vegetable sources, processing, storage andsales process; the two is to increase food safety knowledge publicity through various channels; three is the education and training through the organization of regularcorrelation, to further improve the food safety awareness of the public; four is the government should increase the detection of enterprise self andintermediary organization support; five is to strengthen the role of social supervision, to further strengthen the safety of consumers and the consciousness of self protection.
