The most basic structure of Ganoderma lucidum spores is a kind of ovoid, flattened at the top of the fungal cell, it contains rich Ganoderma lucidum polysaccharide, triterpene, alkaloids, amino acids and other useful nutrients to human body, has the very high nutritional value. Because of Ganoderma lucidum spore's wall structure is tough and resilient, acid and alkali resistants to high pressure, extremely easy to gastric acid digestion in the body, so it's internal nutrients absorbed by the body to use is hard. After breaking the wall,Ganoderma lucidum spores of nutrients will be released fully and easy to be absorbed by human body, so the research on the broken wall upon maturity of Ganoderma lucidum spores has great realistic significance. Research on the wall upon of Ganoderma lucidum spores on recent years has become a research focus in the field of traditional Chinese medicine field, food,health field. With the continuous development of science and technology, breaking the walls of Ganoderma lucidum spores method is more and more, each method has its own advantages and disadvantages.There are mainly three categories:biological method, chemical method, physical method. Biological enzymes hydrolyzed easily to spore release of useful substances; and the chemical method takes long time,and will be bring into other impurities; mechanical method cost to much and consume more energy. Break the walls of most existing methods mainly through breaking the cell structure of Ganoderma lucidum spore's wall or changing the permeability of the cell membrane to the wall.This experiment takes High Voltage Pulsed Electric Field technology to berak the wall of Ganoderma lucidum spore, main conclusions and the contents are as follows:(1) Under the effect of high-voltage pulsed electric field, there are mainly three factors play a key role in breaking the Ganoderma lucidum spore's wall:electric field intensity, pulse width and pulse number; Three influence factors, which influence the largest is the electric field intensity, the second is the pulse width and the third is the pulse number;(2) Through the single factor experiment concluded that:When the electric field intensity in 5?15 kV/cm, wall-breaken rate increases slowly with the increase of electric field intensity; When the electric field intensity in 15?25 kV/cm, the wall broken rate increased significantly with the increase of electric field intensity; When the electric field intensity in 25 to 30 kV/cm, the wall broken rate with the increase of electric field intensity, the increase rate becomes slowly again. When the pulse width at 10 to 20 us, with the increase of pulse width, the rate of broken wall upon maturity Ganoderma lucidum spore has steadily increased. When the pulse number between 5000 and 40000, as the pulse number increasing, wall-breaking rate also increase; But when the number of pulse is greater than 40000 wall-breaken rate was increased with the increase of pulse number gradually decreased, mainly because when pulse number too much, there will be a spore caking phenomenon appeared;(3) Through the response surface optimization experiment, analysis by SAS software again:When the electric field intensity of 28 kV/cm, pulse number is 39418,pulse width is 80 us, the walls broken rate of Ganoderma lucidum spores effect is the best, the wall-breaken rate is about 58.2%.
