The uricularia auricular was accepted by more and more people because their have great taste, nutrition and high health values, but they are not convenient to take for its complexity and unicity in eating methods. A kind of new Auricularia auricular power which could be an fast food was explored in this article with the oeder to make people’s life more convenient and increase the kind of uricularia auricular.Using the Auricularia auricular as the raw materials, the ultrasonic technology was used to grinding it and the optimum production technolody was confirmed by the index of soluble sugar contents.Then, the foemula of Auricularia auricular was gotten by allocation and granulation and their physical characteristics, microbiological indicator, sensory characteristic and physical property were analysed in the end. The main researching content and conclusions were as follows:1. The single test and orthogonal test were used to optimized the ultrasonic technology and the ultramicro airflow grin technology by the index of Auricularia auricula sugar which detected by the Phonle-sulfuric acid method and the optimum technological parameters were determined in the end. The results were as followed:(1) the best conditon of ultrasonic conducting: the ultrasonic temperature 30 ℃, ultrasonic time 40 min and ultrasonic power 450 W, the contents of soluble sugar 0.33 g/L, counted 3.27% of the Auricularia auricula-juade.(2) The best conditon of the Ultrasonic transaction were as follows: the inlet amount 400 g, inlet particle size 40 items, spiral classifier revolving speed 50 Hz, the contents of soluble sugar 0.30 g/L, counted 3.0% of the Auricularia auricula-juade.(3)The report made the Auricularia auricula instant powder through the best ultrasonic condition and the best production craft of the ultramicro airflow grin. The test of the soluble sugar was the most to be 3.34%.2. The Auricularia auricula powder made by ultrasonic-assisted air ultrafine grind were conducted in different mesh granulation and deploy. The solution is smoothy, sweet and delicious tasty.(2)Physicochemical characteristic: moisture 4.74%, ash content 0.54%, protein 6.32%, axunge 5.5%, total sugar 41.27%, dissolving amount 36.6 g/100 g.(3) The result of microorganism test: the whole bacterial colony was 2450 cfu/g, coliform 75 MPN/100 g, no pathogenic bacteria was found.(4) Physical property result: the solubility 7.65 min, slope of repose 40 °, blk density 0.674 g/m L。...
