Meat is rich in dietary composition and contains a balanced diet of nutrients.It plays a vital role in the growth and evolution of the human body.Researches have shown that daily intake of a certain amount of meat products was beneficial to the human body in maintaining nutritional balance and physical health.Protein was known at absorbed and utilized in the form of small peptides and amino acids after gastrointestinal digestion.The protein contained in meat is the main source of human body protein gets.However,the understanding of digestive products of different meat protein was not enough.There were few studies of different meat protein on its digestive characteristics and the relationship with the physiological functions of the body.The main problem may due to the complex composition of meat protein,and also the methods of protein digestibility in vivo were far from mature.In this study,we selected human body as the model,beef and chicken as the main components of the two kinds of diet,respectively.To explored the effects of two kinds of meat on human bodyweight,blood pressure and blood biochemical indexes.And on this basis,proteomics technology was used to replace the traditional method of measuring body digestibility.Furthermore,the similarities and differences of the digestibility rate between beef and chicken diets in human body have been studied,which could found the relationship between them.This study established the foundation for understanding the nutrition and physiological function of different diet meat protein as well as the role of digestion and metabolism of meat protein in the body.The experimental methods and main conclusions are as follows:1.The effects of beef and chicken diets on human physiological characteristicsDuring this experiment,45 young men of the Han nationality received the beef-based diet for two weeks,and then the chicken-based diet was taken for another two weeks.The blood pressure,body weight and blood biochemical indices were analyzed.The results showed that during the beef diet,a higher change in body weight occurred(P<0.05).The changes of TC,LDL,GLU and other blood indexes were significanly lower than those who were subjected to chicken diet(P<0.05),The changes of some indexes such as MONO and BASO were higher(P<0.05).There was no significant change in blood pressure between the beef diet and the chicken diet.In general,short term intake of beef and chicken diets have a significant impact on body weight and blood biochemical parameters.2.The impact of beef and chicken diets on physiological responses of young menFurther researches on the effects of beef and chicken diets on human protein digestion and absorption were studied.Proteomics technology was applied to explored the digestion and absorption of different meat derived proteins in the human body.On the basis of the first part of this study,we collected the fecal samples and extracted its protein.Through the LC-MS-MS technology to determined the molecular weight of the peptide segment,the number of charges,the abundance of peptide segments and other information,and then matched the protein and microbe database of the host to colletcted the total information of the protein in the body.The results showed that the human fecal's protein and digested products had significant difference between the beef and chicken diets.More polar peptides were found in the human fecal samples on the beef diet period,which were easier to be digested by enzymes.After being enzymolysis,We have found 37 and 23 same proteins that were come from human body and intestinal microbes repectively.There were 18 and 24 specific proteins in the beef diet and the chicken diet,11 and 42 specific proteins come from the intestinal microbe.The beef diet has negatively regulated the expression of A2M,PNLIP,MGAM,PIGR,SI,DPP4 and other genes related proteins,which mainly affected the regulation of enzyme activity,protein digestion and absorption,pancreatic secretion,organ or tissue specificity,and immune response regulation.Generally speaking,it has a significant impact on the digestive characteristics of the human body after short-term intake of beef and chicken diets.And further affects other health processes of the body.
