| Breast milk is the best source of nutrition for infants,but due to lack of quantity and other reasons,the infant’s breastfeeding rate is low.Infant formula powder is an important source for infants to obtain vitamin B6.Once it is lacking,it will lead to beriberi and glossitis,oral mucositis and other symptoms of the nervous system in childhood.Vitamin B6 intake in infants’ diets is normal,but deficiency may still occur due to the large amount of requirements.Therefore,infant formula milk deficiency in nutritional enhancement,additional.This article first investigated the effects of light,temperature,pH,oxidants,antioxidants,metal ions,and carbohydrates on the stability of vitamin B6.This part of the system to study the stability of vitamin B6 in infant formula milk powder,and its future research direction Make a vision.In this paper,vitamin B6 in infant formula milk powder was selected as the research object,and the vitamin B6 determination method in infant formula milk powder was optimized.The saponification steps in the national standard method were improved.The overall method was simple,the detection time was short,and the results were accurate.It is applicable to the determination of vitamin B6 in infant formula milk powder and other people’s milk powder products at various stages.At the same time,the stability changes of vitamin B6 components during the process of different production processes and storage environment were studied under different raw material formulations.The study focused on the fluctuation of vitamin B6 content in infant formula milk powder production technology,storage environment,and packaging materials,and analyzed the effects of light,temperature,moisture,acid and alkali,and metal ions on the stability of vitamin B6.Specifically completed the following aspects of research work:(1)This study improved the method of liquid chromatography for the detection of vitamin B6 in infant formula milk powder.Milk powder was added with lipase,lye and ethanol VC solution,the sample was hydrolyzed at high temperature in dilute acid,and then transferred to high performance liquid chromatograph for detection.The overall method detection limit was 0.001 μg/mL,the recovery range was 80.6%to 87.2%,and the stability RSD was 2.86%to 4.75%.The method is applied to the determination of vitamin B6 in infant formula milk powder.The operation is simple,the result is accurate,and the overall effect is satisfactory.(2)The stability of vitamin B6 fortifier was studied experimentally.Through changes in light,temperature,metal ions,and acid and alkali,the content fluctuations of vitamin B6 under different conditions were determined and summarized.Studies have shown that the stability of vitamin B6 enhancer is less affected by acid and alkali and temperature conditions,light and metal ions have a greater impact on its content.The resulting maximum loss rates were 76.4%for light,83.8%for temperature,75%for acid and alkali,and less than 5%for antioxidants and some metal ions.(3)The study summarized the changes in the stability of vitamin B6 during the production of infant formula milk powder.The experiments simulated the homogenization,sterilization,and spray drying processes of milk powder production,and measured and summarized the changes of vitamin B6 content before and after each process.Studies have shown that the sterilization process has the most significant effect on the stability of the vitamin B6 in the process of milk powder processing.In this process,the loss rate of vitamin B6 is about 30.0%;the two sterilization processes of ultra-high temperature sterilization and high temperature short time cause The maximum loss rate was 29.15%and 40.8%.During the whole milk powder processing stage,the loss rate of vitamin B6 was up to 46.1%.(4)The gas used in the package has a significant effect on the stability of vitamin B6.The overall experimental results show that the storage effect of nitrogen and carbon dioxide mixed gas is better than that of nitrogen,and the use of air as packaging gas cannot effectively maintain the stability of vitamin B6 during the shelf life.During storage,the stability of vitamin B6 in infant formula milk powder is relatively less affected by storage temperature and humidity factors.Air factors in the storage environment have a negative effect on the stability of vitamin B6 in infant formula milk powder.After 6 weeks of open storage,the average residual vitamin B6 in milk powder decreased to about 20%.Illumination is the most important environmental factor affecting the stability of vitamin B6 in infant formula powder.The sample that received canned light caused severe vitamin B6 loss rate of about 50%after 30 days. |
