Fuji apple was used as the test material to study the effect of cold storage,controlled atmosphere storage and ice temperature storage on the quality change characteristics of apples during storage,and a consumer tasting test was used to investigate several quality indicators of different apple storage methods.Satisfaction provides a theoretical basis for Fuji apple’s effective storage.The results showed that:(1)With the increase of storage days,the hardness,color,soluble solid content,vitamin C content,flavonoids,titratable acid,moisture content,total phenol content,total reducing sugar,total organic acids,total amino acid content of Fuji fruit were in a downward trend,Total phenol content and sucrose content increased first and then decreased.During the whole storage period,the hardness of Fuji fruit showed a downward trend under different storage conditions,and the difference was extremely significant(P <0.05).The results showed that: No.5 controlled atmosphere storage> ice temperature storage> refrigeration.During the whole storage period,the soluble solid content of Fuji fruits showed a downward trend under different storage conditions.Among them,No.1 cold storage had significant differences compared with other storage methods.The storage of No.5 atmosphere was similar to the storage of No.2 ice temperature,which was better than No.2 and No.3 storage conditions.During the whole storage period,the brightness value and color ratio of Fuji fruit showed a downward trend under different storage conditions,and the difference was extremely significant;The storage results showed that: No.5 controlled atmosphere storage> No.4 controlled atmosphere storage> No.3 controlled atmosphere storage >No.2 ice temperature storage> No.1 refrigeration;During the whole storage period,Fuji fruit’s soluble solids,titratable acid and vitamin C content with the storage time showed a downward trend.The storage results showed that the 3rd,4th,and 5th modified atmosphere storage were better than the No.2 ice temperature and No.1 refrigeration;The study found that the content of Vc in Fuji apple after harvesting decreased with the extension of time,and maintained a higher Vc content at low temperature.During the whole storage period,the moisture content of Fuji fruit showed a downward trend under different storage conditions,and the difference was extremely significant.The storage results showed that: No.2 ice temperature storage was better than No.3 atmosphere gas storage,better than No.4 atmosphere storage No.5 MAP storage is better than chilled No.1;During the whole storage period,the content of flavonoids in Fuji fruitshowed a decreasing trend under different storage conditions,and the difference was extremely significant.The storage results showed that: No.5 controlled atmosphere storage> No.3 controlled atmosphere storage> No.4 controlled atmosphere storage> No.2 ice Temperature storage>Refrigeration No.1;During the whole storage period,the total phenol content of Fuji fruit showed a rising and decreasing trend under different storage conditions,and there was no significant difference in total phenol content between 0-60 days after storage under different storage conditions.After 60 days storage The difference in total phenolic content between different storage methods was extremely significant.The results of storage showed that the effects of controlled atmosphere storage and ice temperature storage on the total phenolic content during the storage of Fuji apple were not significant,but they were all better than those of cold storage.During the whole storage period,the total amount of reducing sugar in Fuji apple was shown under different storage conditions.In the downward trend,among them,sucrose appeared to rise first and then decrease,and fructose,glucose and sorbitol showed a downward trend.The storage results showed that the effect of controlled atmosphere storage and ice temperature storage was better than that of cold storage;during the whole storage period,Fuji apple had a total organic acid content.The quantity showed a decreasing trend under different storage conditions.The storage results showed that the effect of controlled atmosphere storage and ice temperature storage was better than that of cold storage;during the whole storage period,the overall variation of the aroma content of Fuji fruit was not significantly different,and the change of the aroma substance was mainly slight.There are differences;the storage results show that the storage effect of ice temperature is better than that of controlled atmosphere storage and refrigeration.(2)According to the consumer satisfaction survey of Fuji apple under different storage modes,the ice temperature storage can keep the sensory characteristics of Fuji apple better,and the consumer satisfaction is much higher than that of controlled atmosphere storage and refrigeration;The experimental results show that the atmosphere storage can better preserve the nutrients of Fuji apple,so that it has a rich nutritional quality,and when the ratio of oxygen to carbon dioxide in the air-conditioning library is 1:2,the best storage effect.Compared with the controlled atmosphere storage and the ice temperature storage,the storage advantage is not significant.
