As a kind of high nutrition food,quinoa is gradually favored by consumers.It is in line with the current concept of healthy diet to obtain rich nutrients by eating quinoa.But at present,due to the lack of perfect production and processing technology,the low degree of seed coat removal in quinoa seed husking process affects the taste of products;the high proportion of broken rice in processing reduces the effective utilization rate of raw materials and other problems.In this paper,quinoa seeds after cleaning were taken as the research object.On the premise of avoiding seed germination and reducing environmental pollution,based on the principle of rubbing off and peeling,the dry husking method was adopted,and the husking process and parameters of quinoa seeds were optimized through experimental research.The main research contents are as follows:(1)Taking quinoa from Inner Mongolia of "Mengli 2" as the research object,the physical parameters of quinoa,such as moisture content,bulk density,friction coefficient and so on,were measured after cleaning and removing impurities.(2)The compression test of quinoa grain was carried out to study the stress of the grain in different directions and obtain the relevant mechanical parameters.Based on the biological structure of quinoa grain,the distribution of cracks in the broken grain was analyzed.(3)Compared with the commonly used methods of grain peeling,combined with the physical characteristics of quinoa seeds,the rubbing and peeling method based on the principle of peeling off was determined.Analyze the force and movement state of the seeds during husking,check the average stress of the seeds during fluid husking,and select the rubbding and husking equipment to build the test-bed.(4)Two test schemes were designed:single rubbing and husking of intermittent feeding and cyclic rubbing and husking of continuous feeding.Through single factor test,orthogonal test and circular rubbing test,the effects of rubbing gap,husking roller speed,rubbing time,feeding amount,outlet pressure and cycling times on the husking rate and rice breaking rate of seed coat,which are used as the indicators of husking effect,were explored.Through the comparison of the peeling effect with the existing husking process in the local factory,the detection of quinoa saponin output and the comparison of the rubbing efficiency between the two test schemes,it is obtained that the continuous feeding cycle rub husking method is adopted in the feeding amount of 356.69g/min,the rubbing gap of 2mm,the rotation speed of the husking roller of 1335r/min,and the outlet pressure is 5N and the number of times of circular rubbing is 1,the better husking effect can be obtained.At this time,the rubbling reduction rate of seed coat is 84.57%,the broken rice rate is 4.21%,and the saponin content of quinoa is 9.42mg/g.
