Huangjiu has a long history of more than 2,000 years in China,sharing the world’s three major wines with grape wine and beer.The alcohol content of Huangjiu is low,generally 8 to 16 degrees.Huangjiu itself is rich in nutrients such as glucose,various organic acids,and various amino acids.In addition,it also has functional components such as oligosaccharides,polyphenols,and glutathione.Healthy wine has also been in China for thousands of years and is an important part of traditional medicine.In recent years,with the aging of China’s population and the increasing number of sub-health,the public’s demand for health care has prompted the healthy wine market to flourish.Nowadays,the healthy wines on the market mostly use liquor as the wine base,such as Jinjiu,Wujiapi,etc.The development of healthy Huangjiu is still at the stage of exploration.Since ancient times,Huangjiu has a history of medicinal liquor base,which can be perfectly integrated into the therapeutic concept of Chinese medicine diet.And low alcohol is healthier than high alcohol.In this case,the study attempts to make a functional healthy Huangjiu.Using the low-grade(8 degrees)traditional sweet Shaoxing Huangjiu as wine base and adding Chinese herbal extracts of ginseng,licorice and sweet-scented osmanthus to increase the content of functional ingredients such as saponins and flavonoids.I hope to provide a new idea and method for the development and production of healthy Huangjiu.This research mainly contains four parts:(1)Commissioning of the formula of formula Huangjiu.First,through consulting the literature and asking relevant personnel,we have developed several Chinese medicine formulas that conform to the concept of traditional Chinese medicine and determined the method of making formula rice wine.Then we have determined the best formula and optimal wine base of formula Huangjiu by sensory analysis: raw sun ginseng,licorice,osmanthus and sweet lowgrade Shaoxing rice wine.Finally,the D-optimal mixing design method is used to determine the specific proportion of each ingredient in the Chinese herbal medicine compounding formula.(2)Anti-fatigue effect of formula Huangjiu’s Chinese medicine formula on mice.WE have designed weight-bearing swimming and atmospheric hypoxia tolerance tests,detected some physical and chemical indicators.The result proved that the low-dose and medium-dose groups of formula Huangjiu’s Chinese medicine formula have obvious anti-fatigue effect on Babl/C mice,and it can regulate the immunity of mice to some extent.(3)Formulation extraction process optimization.Through the literature and animal experiments,the traditional Chinese medicine formula of formula Huangjiu has anti-fatigue function,and its active ingredients are saponin and flavonoid.Through the single factor experiment and the response surface Box-Behnken method,the optimal extraction process of the active ingredients of formula rice wine Chinese medicine formula was determined as reflux time 4.69 hours,ethanol content 70%,temperature 80℃ and ratio of material to liquid 1:25.(4)Identification of the quality of formula Huangjiu.Refer to the national standard GB/T 13662-2018,to evaluate the sensory quality of formula rice wine and determine the physical and chemical indicators of formula Huangjiu.And using GC-MS gas chromatography-mass method to compare the difference of volatile aroma components between formula Huangjiu and wine base,in addition,the total saponin,total flavonoid and total polyphenol content and antioxidant activity of functional ingredients in formula Huangjiu were determined.The results showed that formula Huangjiu meets the standard of yellow wine,and its volatile components are highly similar to the wine base,and the active ingredients and antioxidant capacity are stronger.
