In order to realize the mechanized harvesting and large-box curing of tobacco leaves,reduce the cost of tobacco leaf harvesting and curing,improve the quality and availability of tobacco leaves,and increase the economic income of tobacco farmers,this study uses Yunyan87 as the test material to obtain the results through conventional three-stage curing.The roasting characteristics of whole stalked tobacco leaves,based on the roasting characteristics of whole stalked tobacco leaves,study the suitable roasting process of whole stalked tobacco leaves and determine the relevant physical and chemical parameters during the roasting process to explore the roasting effect of whole tobacco leaves.The specific research results are as follows:The free water content and total water content of the whole stalked tobacc le oaf during the curing process are higher than that of the stalk-cured tobacco leaves,and the water loss rate is generally characterized by slow water loss during the yellowing period and color fixation period,and water loss during the dry gluten period Fast speed;slow yellowing and color fixation speed,long baking time,uncured main veins and green-cured browning are likely to exist in the cured tobacco leaves,the chemical composition of the cured tobacco leaves is poor,the lower smoke rate is high,and the economic properties are poor.The process is optimized according to the general curing characteristics of the whole stalk tobacco leaf,specifically:the temperature at the early stage of yellowing is 38°C,the humidity is 36°C,and the temperature stabilization time is 18h;the middle stage of the yellowing temperature is 40°C,the humidity is 37°C,and the temperature stabilization time 20h;late yellowing temperature 42?,humidity36.5?,stabilization time 24h;pre-fixing temperature 44?,humidity 36?,stabilization time15h;mid-fixing temperature 48?,humidity 36.5?,stabilization time 20h;In the late stage of color fixation,the temperature is 50?,the humidity is 37.5?,and the temperature stabilization time is 16h;the early stage temperature of the dry bar is 54?,the humidity is 39?,and the temperature stabilization time is 12h;the middle stage temperature of the dry bar is 60?,the humidity is 41?,and the temperature stabilization time is 12h;The later temperature is 68?,humidity is 42?,and the temperature stabilization time is 33h.After the optimized curing process,the L*value and b*value of the whole stalk-cured tobacco leaf are higher than that of the stalk-cured tobacco leaf,and the a*value and?E are lower than the stalk-cured tobacco leaf,and the appearance of the cured tobacco leaf is good;It shows a trend of first decreasing,then increasing and then decreasing,the enzymatic browning reaction is weak,the content of phenolic substances such as chlorogenic acid and rutin in the cured tobacco leaves is high,the aroma quality is good,and the aroma is sufficient.The whole stalk-cured tobacco leaves have relatively high antioxidant enzyme and amylase activities,and the enzyme activity lasts for a long time.The content of MDA and H2O2is lower than that of the stalk-cured tobacco leaves,which is conducive to maintaining the normal physiological metabolism of the tobacco leaves and promoting starch and Decomposition and transformation of nicotine and other related substances.After curing,the tobacco leaves have low starch,nicotine and total nitrogen content,and high total sugar and reducing sugar content.The internal chemical composition of the tobacco leaves is coordinated,which is beneficial to fully demonstrate the quality of the tobacco leaves.Compared with the stem-binding curing tobacco leaves,the whole stem-binding curing tobacco leaves have loose structure,relatively more oil,sufficient aroma,rich aftertaste,good sensory quality and high quality tobacco leaves.The ratio of superior tobacco is high,the ratio of middle tobacco is basically the same,the ratio of inferior tobacco is lower,and the average price is higher.The total production cost is reduced,the economic character is good,and the income of tobacco farmers is effectively improved.The whole stem curing process is reasonable and can be applied in production and life.
