The main raw material of hollow capsules is animal gelatin on the market at present.The physical and chemical properties of gelatin capsules determine that they have strong hygroscopicity,easy to crosslinking reaction,security risks of animal infectious disease and high storage requirements.Celery,starch and other supplementary were used in this article to develop a new plant hollow capsules.The starch has good compatibility with fiber in celery.According to the drug packaging hollow capsule of physical and chemical properties and other performances requirement,in this paper,based on the analysis of a variety of existing edible materials,comprehensively analyzed and summarized a number of related research results,used some of the plant hollow capsule forming methods,for reference to explore a new method for food package hollow capsules by die molding for several times.The raw material of hollow capsules are mainly made of celery fiber and potato,added with some accessories such as konjac flour,honey,carrageenan,glycerol and so on.Using single factor and orthogonal experiment method,to study the influence of different ratios and different molding process conditions on the surface state and quality、physicochemical and mechanical properties of molded celery fiber hollow capsules optimized the materials ratios of main and auxiliary,forming process route,forming process parameters,forming mold structure and demoulding mode,The optimized results are the followings:(1)The ratio of main and auxiliary materials of the formed celery plant hollow capsule are:celery fiber and potato starch mass ratio is 3:7,starch and deionized water ratio is 1:5;glycerol,honey are accounted for 3.5%of the proportion of slurry,the ratio of carrageenan and konjac powder is 3:2,the complex hydrosol is 1%,the complex hydrosol accounts for 25%of the slurry mass.The rheological properties of the slurry prepared by this formulation are suitable,easy to foming and demolding.Studies have shown that:the apparent viscosity of the slurry is greatly influenced by the temperature of the bath and the blending ratio,less affected by the rotor speed of the electric mixer.(2)The foming route of celery plant hollow capsule is:Beating→Starch gelatinizing→Celery pulp preheating→Preparing for compound rubber→Slurry mixing→Hanging mold→Drying→Resurgening→Stripping→Cutting→Drying→Testing→Packaging.(3)The optimal molding parameters for forming celery plant hollow capsules are:the beating degree of celery is from 30 to 40°SR,preheating temperature of celery pulp is 40℃,compound glue water bath temperature is 70~80℃,mixing time is 30min,the slurry is mixed at a temperature of 60℃,mold preheating temperature is 50℃,the drying temperature is 50℃,the capsules are formed by drying for many times,the final drying time is 90min,after the resurgence capsule is stripped at the water content of about 30%,the moisture content of the finished product is controlled within 10%.Under this process,the capsule hangs on the mold uniformy and stably,the prepared capsules have good densities,basically no cracked pores,and are easy to be demoulded.(4)Through comparative experimental study,The final design of the die core is like this:a diameter of 0.5mm conical holes on the top、internal hollow and the surrounding distribution of three uniform micro-shallow grooves,The structure is help for reducing the clamping force and demoulding force effectively and overcome the demoulding difficulties and damage phenomenon caused by negative pressure,determine the manner and pneumatically demoulding method are proposed for a better condition for further experimental study.The appearance of celery plant hollow capsules developed in this paper is greenish brown opaque body and nave,smooth appearance、uniform color、no peculiar smell,with the tensile strength of 7MPa,elongation of about 28%.In 0.1mol/L dilute hydrochloric acid,the disintegration time of the capsule is less than 20min.Moisture content in the capsule is within 10%.According to the national standard,the volume,length and other indexes of the food packaging hollow capsule are desirable,so it is worth marketing.
