Dietary fiber is known as the seventh largest nutrient element.Research shows that a high-fibre diet may prevent disease,such as hypertension,hyperlipemia,hyperglycaemia,diabetes,fatty liver,obesity,cancer and constipation etc.But,95%of the Chinese are insufficient for intake of dietary fiber.Fruit residues are rich in dietary fiber,that are produced after juicing,wine-making and function composition extracting.Some of residues are used as feed and fertilizer,but most of them are abandoned.Therefore,in this study,seabuckthorn residue and yacon residue were used as raw materials to extract dietary fiber,studied physicochemical properties of dietary fiber.And seabuckthorn dietary fiber chewable tablets and yacon residue dietary fiber biscuits were developed by using traditional Chinese medicine prescriptions for reference.This study further explored the properties of fermented fruit pomace and new ways and methods of utilizing insoluble dietary fiber to provide technical support for enriching dietary fiber products in China.The main results are as follows:(1)Seabuckthorn dietary fiber was prepared by enzymatic-chemical method.The final yields of IDF,SDF and dietary fiber were 56.19%,8.98%and 64.68%respectively.The water holding power of DF was 5.71g/g,swelling power of DF was 5.48m L/g,water binding power of DF was 6.08g/g,oil holding power of DF was 3.05g/g and hydroxyl radical scavenging capacity of DF was 244.56 mg ascorbic acid per gram.(2)On the basis of Dashanzhawan pills,yeast powder took over from Massa Medicata Fermentata,and added Seabuckthorn dietary fiber to prepare Seabuckthorn dietary fiber chewable tablets in this study.The formulation of seabuckthorn dietary fiber chewable tablets was optimized by orthogonal array design,the optimal formula was:when the total amount of material is 3500g,Seabuckthorn DF 700g,hawthorn 400g,oligoisomaltose 300g,honey 1500g,yeast powder 200g,malt 200g,endothelium corneum gigeriae galli 100g and konjac 100g.The chewable tablets meet Chinese pharmacopoeia(edition 2015),are sour and sweet taste with smooth feeling,and have laxative,improved digestion effect.(3)The yield of yacon dietary fiber(DF)prepared by alkaline method from yacon residue was 74.95%.The infrared spectra of DF showed that there were O-H stretching vibration characteristic absorption peaks near 3400 cm-1,C-H stretching vibration characteristic peaks near 2900 cm-1 and scissoring vibration characteristic peaks between 1230-1380 cm-1,C-O stretching vibration between 1050-1160 cm-1,conjugated absorption of carbonyl and aromatic rings near 1620 cm-1 and characteristic absorption peaks ofα-pyranose near 900cm-1.The water holding power of DF was 6.46 g/g,swelling power of DF was 4.38 m L/g,water binding power of DF was 7.10 g/g and oil holding power of DF was 2.70 g/g.The adsorption capacity of yacon dietary fiber for glucose was 2.1500 mmol/g,cation was 4.6963mmol/g,cholesterol was 3.2907 mg/g(p H=2)and 6.4753 mg/g(p H=7),nitrite was 25.6867micromol/g(p H=2)and 15.67 micromol/g(p H=7).The adsorption capacity of yacon DF for Pb2+,Cd2+and Cu2+was120.10 mg/100g,16.50 mg/100g,8.50 mg/100g(p H=2),206.02mg/100g,29.59 mg/100g and 33.20 mg/100g(p H=7),respectively.The hydroxyl radical scavenging capacity of DF was equivalent to 23.89 mg Vc per gram.(4)Yacon dietary fiber,inulin,adzuki bean and low gluten flour were taken as the raw material to prepare yacon dietary fiber biscuits in this study.The formulation of yacon DF biscuits was optimized by principal component analysis and response surface methodology,the optimal formula was:thickness was 2 mm,butter was 36%,adzuki bean powder was26%,inulin was 30%,yacon DF was 15%.The standardized comprehensive score was0.870061,and met the GB/T 20980 and GB 7100.The results showed that the satiety index of bread,biscuits and yacon dietary fiber biscuits was 100%,99.45%and 111.91%respectively.The satiety index of DF biscuits was significantly higher than similar biscuits,which could be used as weight-loss biscuits.In this paper,the new ways and technology of utilizing seabuckthorn DF and yacon DF were studied,the range of utilization of seabuckthorn and yacon residue was widened.And seabuckthorn dietary fiber chewable tablets and yacon dietary fiber biscuits were developed,which provided technical support for dietary fiber products in China. |
