| It is of great significance for the production and popularization of yellow tea of western Anhui Province with standard grade difference.In this thesis,the grades of yellow tea of western Anhui Province were classified referring to the current standards of yellow tea and the integrated opinions of experts,local tea authorities and technicians,and the corresponding physical standard samples were developed.At the same time,80 consumers were recruited and 22 assessors were selected to evaluate the appearance and the overall quality by Ranking and Napping-UFP,respectively.In the following year,the physical and chemical components of the duplicated physical standard samples were analyzed.The results of this study are as follows.(1)The standard samples of yellow tea of western Anhui Province were classified into nine samples of three categories,namely yellow bud tea with two grades(the super class and the first class);small-leaf yellow tea with two grades(the super class and the first class);large-leaf yellow tea with three grades(the first class,the second class and the third class),of which the second class and the third class had two samples(light fire and sufficient fire),and the first class only had light fire samples according to market circulation.The standard samples have been demonstrated by experts and enterprises.It was confirmed that grade differences of the standard samples were obvious and their quality characteristics were typical.(2)Based on the Ranking,consumers judged the tenderness of the prepared standard samples of yellow tea of western Anhui Province according to the appearance.It was concluded that there was no significant difference between the super class and the first class of yellow bud tea in this series of samples.Therefore,sample preparation of yellow bud tea was adjusted in the subsequent process.(3)Based on Napping-UFP,assessors evaluated the appearance,aroma and taste of standard samples of yellow tea of western Anhui Province.It was found that assessors could accurately distinguish different grades of samples by appearance,and three categories(yellow bud tea,small-leaf yellow tea and large-leaf yellow tea)and two roasting degrees(light fire and sufficient fire)by aroma or taste.At the same time,the assessors generated abundant attributes involving 33 of appearance,21 of aroma and 24 of taste,among which high-referred words such as "green" "yellow" and "fairly stalk" in the appearance attributes,"tend aroma" "sweet aroma" and "tobacco" in the aroma attributes,and "fresh" in the taste attributes were able to distinguish yellow tea of western Anhui Province.(4)This article analyzed the contents of moisture,water extract,and total ash of the replicative standard samples required by GB/T 21726-2018.The overall results showed that the contents of physical and chemical components of this batch met the requirements. |
