| In this study,20 jujube samples from five regions in Xinjiang were used as test materials to analyze their physical properties,nutritional components and key active components.Based on the Chinese Pharmacopoeia and the American Herbal Medicines Compendium,the quality of jujube was comprehensively evaluated by using the fuzzy mathematical membership function method,and the jujube varieties suitable for medicinal jujube raw materials were selected.The selected raw materials were processed to develop two kinds of medicinal jujube products: dry red jujube and dry red jujube slices;To study the influence of processing technology on the key pharmaceutical active ingredients of Chinese jujube,optimize its processing technology,and improve the processing technology of Chinese jujube.This study can provide important reference value for the development of edible and medicinal jujube,and lay a foundation for the industrialization of medicinal jujube products.The main research results are as follows:(1)Screening of raw materials of medicinal jujube.The results showed that 20 jujube samples from 5 regions in Xinjiang all met the requirements of the American "Herbal Medicines Compendium" for c AMP content,and the content was>0.01%;12 red jujube samples such as Alar grey jujube meet the requirements for ash content in the Chinese Pharmacopoeia,and the content is less than 2%;The 9 samples of Alar Grey Jujube meet the requirements of the Chinese Pharmacopoeia for characters.At the same time,7 samples of Alar Grey Jujube,Alar Jikang No.2,Alar Bone Jujube,Kashi Grey Jujube,Kashi Round Crisp Jujube,Kashi Jixin Jujube and Korla Grey Jujube meet the above three requirements;Through the comprehensive quality evaluation of the nutrient and active components of 20 jujube samples,it was found that Hami Junzao,Kashi Junzao and Alar Huizao were the top three in the comprehensive quality evaluation,and the quality was good,with the average membership function values of 0.61,0.58 and 0.55respectively;The top three in the comprehensive quality evaluation of seven kinds of red dates that meet the requirements of raw materials for medicinal red dates are Alar Grey,Kashi Grey and Kashi Jixin,with average membership function values of 0.55,0.53 and 0.41 respectively.Among them,Alar Grey has the best comprehensive quality evaluation and is recommended to be used as raw materials for medicinal red dates for subsequent development of medicinal red date products.(2)Study on Processing Technology of Medicinal Dried Red Dates.The effects of blanching and steaming pretreatment methods and drying temperature on the content of the key active components(polysaccharides,total triterpenoids,c AMP)of medicinal dried jujube were studied.It was found that with the extension of steaming and blanching time,the content of polysaccharides in jujube samples decreased,while the content of total triterpenoids showed an increasing trend in the blanching process and an increasing trend first and then a decreasing trend in the steaming process;The content of c AMP increased first and then decreased with the prolongation of blanching and steaming time;With the increase of drying temperature,the content of three key components in jujube increased first and then decreased;Through the comprehensive quality evaluation of the contents of three key active ingredients in each sample,it was found that in the processing of medicinal dried red dates,steaming for 20 min and drying at 70 ℃ were the best,and the average membership function value was 1.00.(3)Study on Processing Technology of Medicinal Dry Red Jujube Slices.The influence of slice thickness and drying temperature on the content of three key active components in processed medicinal dry red jujube slices was studied.It was found that slice thickness had little influence on the total triterpene content in jujube slices.With the increase of slice thickness,the content of polysaccharides in jujube slices increased first and then decreased,and the content of c AMP increased first and then decreased and then increased;With the increase of drying temperature,the content of polysaccharides and total triterpenes of dried jujube increased first and then decreased,and the content of c AMP decreased,then increased and then decreased;The comprehensive evaluation of three key active components of dried jujube products showed that the highest score was obtained when the drying temperature was 50 ℃ and the slice thickness was 8 mm,and the average membership function value was 0.69;The drying temperature of 70 ℃ and the slice thickness of 6 mm were the second,and the average membership function value was 0.66.(4)Comprehensive evaluation on the quality of medicinal jujube products.The contents of three key active components of medicinal dry red dates,medicinal dry red dates tablets and unprocessed red dates developed in this study were analyzed.It was found that the contents of polysaccharides,total triterpenoids and c AMP in medicinal dry red dates and medicinal dry red dates tablets were higher than those in unprocessed red dates. |
