The coexistence of the biological and cultural aspects of human diet gives the activity of eating its own special symbolic meaning,and thus becomes a symbol.Chinese food symbols contain the humanistic spirit and wisdom of the Chinese nation,which is one of the important contents of culture teaching in international Chinese education and an essential part of language life.On the one hand,the diversity of food symbols enables students to appreciate the diversity of Chinese culture and makes learning Chinese more intuitive and enjoyable,but on the other hand,their complexity and cross-cultural differences can be a deterrent to students.Therefore,the purpose of using food symbols as an entry point to study the teaching of international Chinese culture is to reflect the inseparability of language and culture,so that teachers can integrate the teaching content,teaching format,teaching medium and teaching process,and successfully carry out cultural activities in the classroom.The thesis consists of five parts.The introductory section introduces the current status and background of research on dietary symbols and the teaching of culture,the purpose of the study and the methodology.The first chapter explores the extralinguistic and material product characteristics of food symbols,and elaborates the extension and connotation of Chinese food symbols from four aspects: food,drink,eating utensils,and cooking concepts.In the second chapter,starting from the definition of culture and based on the Reference Framework for Teaching Chinese Culture and National Condition for International Chinese Language Education published in 2022,three forms of culture teaching are highlighted: systematic culture teaching,culture experiential teaching,and culture teaching accompanied by language,providing new concepts and new ideas for teaching the culture of dietary symbols.In Chapter3,based on two textbooks,Case Studies on Teaching Chinese in Foreign Classrooms and Case Studies and Reviews on Teaching Chinese Internationally,a case study is conducted on the food culture part of it from four dimensions: teacher’s role,teaching process,teaching form and teaching media.In Chapter 4,based on Patrick R.Moran’s concept of culture teaching,strategies for teaching international Chinese food symbols culture are constructed from four aspects: cultural content,comprehension methods,comprehension reasons,and self-awareness.The study of teaching international Chinese culture based on dietary symbols can stimulate teachers’ awareness of multiple orientations,increase the experiential nature of students’ learning as well as the dynamic nature of cultural knowledge acquisition,reflect the contextualization of teaching contents,and thus promote the timeliness of international Chinese education.
